    I have my standing roast on the WSM using Kinsford original, almost a full trey of coals, water in the pan vents open 100% all it has after 1 hour is 265 degrees What gives?

    Cast Iron Grates for the Genesis...

    In my Genesis, I use medium heat and don't have much of a sticking problem unless they are not ready to be flipped. Those grills cook so hot, if you don't have your times down BAM it's shoe leather! Otherwise, maybe spray some non stick agent before hand, PAM or equivalent.
