    Yes! And when cooked properly, they have just slightly more chew. If you overcook them, they definitely turn to sawdust pretty quickly... but yeah, the poor man's filet almost. Even though it's not as cheap as I could get it at a non high-end grocery store, Whole Foods here has them for $4.99...

    Funny you mention it, the propane tank must've been extremely low, because it died only about 45 seconds into it's next use this weekend. I put a new one on and it was perfect. I even let it run a few extra minutes to see if it would frost up, but it ran perfectly with no overdraw or anything...

    Thanks bob, I used top and bottom racks. I only stacked them quick while I got the tray ready to take inside. But this was the most ribs I had on the wsm, so I'm going to have to invest in a rack if I continue this!

    Thanks for the comments everyone. I forgot to mention, this was kingsford coal, with some oak & apple chunks thrown in. I wish I got some pics of the bend test, these things were probably the best doneness I have ever gotten, flavor profile was great too. I was real happy w/ this cook.
