St. Louis Ribs with Grilled Shallots and Gold Potatoes

Love those bones and your plate. Beautiful color on the ribs. That ancho cherry sauce is intriguing, care to share the recipe? You have inspired me to cook low and slow ribs again. And will do it if I ever get that organized earlier in the day.

Those are some super looking tacos and sides. And I bet: tasted better than they look. Your presentation is beautiful. Am guessing the onions went in the salsa?

Replacement kettle for old SS Performer Touch-N-Go

I think that is a direct bolt in. A friend of mine that flips kettles does this. Or check with the Weber Kettle Club.

Replacement kettle for old SS Performer Touch-N-Go

You could cut the brackets off your existing performer and use them to mount a "stock" charcoal bowl to your frame.

    Thermoworks 4 Probe Thermometer?

I called tech support at Thermoworks about this. So: touch any of the circles on the home page and it brings up another page. Touch the settings icon in the upper right corner and it brings up the sensor setting page. At the bottom there is an options bar. Touch that - Probe Options appears...

    Thermoworks 4 Probe Thermometer?

Got it workin'! Took forever to get it synched with the wifi. Seems like Signals only likes 2.4 ghz and all it would find is the 5 g on my wifi. Poked around on my internet/tv support website which has access to my wifi and found the 2.4 "channel", it's name and password. After that, piece of...

Smoking On The WSM With No Heat Diffuser

I've been doing it for years. No problems. Well... except once. Did a 10 lb butt in the 14.5 and there was so much drippings that it became a flood. So now I use the 18.5 if I'm doing that big of a chunk of meat. Gotta size the meat to the cooker.

    Thermoworks 4 Probe Thermometer?

:) This showed up yesterday: Was just about to pull the trigger on a Gateway. Anyhoo... haven't used it yet. Looking at the software, it appears that it will also interface with Gateway and Blue Dot, although I could be wrong. So depending on what, it may track 6 -7 probes? My Mavericks are...
