    I mainly use kingsford and have no issue with it. You can get the 2 14lb bags at Sames for 13 bucks almost all year round. I never have had a issue with it.

    Use a turkey roasting rack for a rib rack

    E-320 from 5 star dealer or big box?

    I just purchased the E-310 (I have never used the side burner), I didn't notice that the S-310 had stainless grills and flavor bars. Is it really worth it to replace these items right off the bat? or should I wait? What are the correct part numbers?

    Ribs came out much better thanks to higher temps

    all the talk about ribs - yummy I get the same 3 rack pack at Sams - I split the racks and cook at around 250. I find the hotter temp makes them come out better as well. I like it when the meat falls off the bone. Last 2 cooks I tried to cook slower at 225 and they just didn't come out right...

    WSM on a wooden deck?

    I don't think you have anything to worry about. Just keep the dogs inside and no worries about it getting pushed over. I haven't ever had any issue and have no plans to move my WSM off my deck.

    Costco or Sam's Club

    I have been buying BB Ribs from Sams for a few years now. I had one problem with quality. I let the butcher know the next time in and he gave me cryovac for Free I will not shop at Wal-Mart due to the horrible service but SAMS gets my money every month.

    That is one huge setup - I thought cooking with 2 WSM was a good safety net. You know just in case one brisket gets messed up. You on the other hand plan for a lot of mistakes. JK - That is a great idea for a fund raiser.
