Celebrating the first day of spring

I cooked a couple of boneless rib eyes I had found on closeout a few weeks ago. I vacuum sealed them and kept them in the freezer until today, then cooked them over lump charcoal with a handful of maple and apple twigs for a little smoke flavor. It pays to check the meat department for markdowns...

How and why do you use a vacuum sealer, and is it essential for you?

I wouldn't want to be without one. When I had a large freezer I used to buy pork butts by the case and smoke them two at a time. Vacuuming sealing and freezing the excess pulled pork was the easiest (maybe the only) way to make that work. Buying other meats in bulk and freezing them in meal-size...

Rivet Removal on a WSM Pre-2009

Just what Scott said. They come in various shapes. A Dremel is faster, so this is a good excuse to buy yourself one. Or you can use your drill.

Rivet Removal on a WSM Pre-2009

The problem with drilling out rivets is that they tend to spin. I think I would try using a small grindstone in a drill (or a Dremel tool) , and grind off the rivet from the inside, being careful not to damage the porcelain. Or, if you can press the head of the rivet against a wood block (or...

    My First Cook Ever

Nice job for your first cook. The stall gets us all. You know it's coming, you just don't know how long it will be. As for temperature, I usually try for 250 but I cooked the last butt at 275 because it was 10 pounds, and it was one of the better ones I've ever made. So if you can get the WSM...

You know you're getting old when...

I still have my Post Versalog, leather case, and instruction book. It still amazes me that I would go into something as important as a math final, do a bunch of manipulations on the slide rule in a few seconds, and have the confidence to write down the result as my answer. I joke that, if...

    Yet another butt

Butts were 0.99/lb today, and the temperature hit 70 degrees, so I had to cook one. A little over 10 pounds, rubbed with Memphis Dust, and cooked over Walmart briquettes (that's all I had) and hickory. It cooked for about 11-1/2 hours and is now resting in a cooler. I didn't take any pre-cook...

    more butt...

Excellent! Butts were .99/lb here, and it's 70 degrees outside, so I put a 10 pound butt on at around 6:30 this morning. It just hit 185 degrees internal, so I have a while to go. I hope it's half as good as yours appears to be. 😁
