The white sauce im familiar with originated in Alabama..at least thats where I first saw it. It is basically mayo vinegar lemon juice salt pepper and little sugar..really good on chicken
Really no difference between pecan and hickory..I know a lot of you will tell me you can tell the difference..but actually a lot of wood you buy labeled as hickory is actually pecan
Nathan I dont think it will get too salty..depending upon how much salt is in your brine of course..I sometimes brine pork for 48 hours..12 hrs is my minimum
