    Smoking Lean

Pork loin is lean and very good if you don't overcook it.

Anyone switch to the oven for foiling?

    Buy injector ???

I know this one is fairly popular. I have a couple but never used it myself. http://www.amazon.com/Chef-Wil...id=1265118843&sr=8-1

    Stokerlog Version 6

Ok, that didn't work. I ended up having to unhide the Win 7 admin account, reinstalled the program, and now I can run it from the admin account. That works for now.

Save your money and buy a stoker.

    Stokerlog Version 6

I'll give it a shot this weekend. I'm cooking Saturday, so I'll see if the workaround works.

    Stokerlog Version 6

Amir, I was unable to do anything - hit the start button and get the error message. I went into Settings - Advanced - and changed the location of the log file to within My Documents. Now, I can hit start and it works (yet to hook up the stoker). Did I mess something up here? Thanks

    Chicken in Comps.

As long as it is cooked over wood, charcoal, or pellets, the temperature doesn't matter. You can grill, smoke, both, etc.

    Stokerlog Version 6

I had the same issue -- there are a couple of workarounds. This is caused b/c UAC doesn't allow writing data to global locations. (What puzzles me is that UAC is supposed to redirect these calls transparently to per-user locations, and I'm not sure why that isn't happening.) At any rate...

    Chicken in Comps.

Jeff, do you find raw chicken to be occurring quite often? Seems to me that it must be happening often enough for you to take the time to disassemble the piece. When I judge, I just eat it as it is presented.

    5 LB propane tank

I just bought a new performer and use a cable / adapter to hook up my 20# tank. If you don't mind using a 20# tank, you could just use an propane extension cord. That tank will last you a very long time. I'm guessing there is a converter that goes the other way, but I haven't seen anything.

Four Chickens on an 18" WSM?

Glad it worked out for you. Regarding one side getting done before the other - was it windy out? Sometimes a cold wind can cool one side of the cooker more than the other.

Four Chickens on an 18" WSM?

The best way, imo, to ensure a juicy breast is to brine it and then not overcook it. Cooking the birds flat allows the dark meat to get done more quickly so the breast doesn't dry out. I don't think using two racks is a pain. I'm not convinced beer can chickens get that much of a boost from...

Four Chickens on an 18" WSM?

I prefer to spatchcock chickens. I don't know that you can fit two whole chickens, but if you go a step further and halve the spatchcocked birds, you should be able to arrange them just fine. I'd brine them for a few hours and then give them a light dusting of rub. I use fruit wood like apple...

    two standing rib roasts

Well I haven't cooked two rib roasts, but I'll try and offer some help since no one has chimed in. The cook time shouldn't be too different, aside from the fact that you're putting almost twice as much cold meat on in the beginning. It will take the smoker a little longer to recover back up to...
