    Overnight chuck roll.

Looks good. The WSM is great for overnighters. Once it settles in, it's pretty steady. Granted, I've upgrade to a Stoker which sends e-mail to my Blackberry every 15 minutes, but it works without all the bells and whistles just fine. Keep us updated with the pics!

    Rib cooking

I'm sure you have the ribs and this is moot, but I don't think it would hurt to do some chicken quarters or something else first. That way you can get the hang of how the smoker works, how to control the heat, etc. Not that it is terribly complicated, but you don't want to mess up a nice batch...

    Handles for 22"

    Handles for 22"

Yeah, it works fine. I wear gloves when I lift it off. The holes on the 18" are closer together, and you can use most standard garage door replacement handles. They are cheaper, like $6 for a pair.

Rancher Charcoal is coming to Trader Joe's!!!

That's great! I've been wanting to try it and have never had access to it.

    Royal Oak charcoal briquettes

<BLOCKQUOTE class="ip-ubbcode-quote"><div class="ip-ubbcode-quote-title">quote:</div><div class="ip-ubbcode-quote-content">in the past for long cooks, but know nothing about the quality of the briquettes. Are the briquettes any good, or should I just stick with Kingsford briquettes? Thanks...

    Finally took the plunge!

Brandon, you'll be very happy with your purchase. I owned a DigiQ2 but ended up selling it to get a stoker. It worked absolutely great, I just needed to control more cookers at once.

    Fred's charcoal briquettes

For cheap charcoal, I usually can get royal oak briquettes for $4 / 18 # bag. The last sale they went up to $4.44, which is still decent.

    Fired Up the 22

Not sure if this image will work, but here's the idea I have. Like most of my projects, this one sits waiting for me to do. I would build it like this, minus the handle. http://i160.photobucket.com/al...chutson/DSC03131.jpg

Where can I buy Apple wood chunks?

I know the online prices aren't great, but I've been very pleased with wood ordered from Smokinlicious - I get the double filet and am impressed with the quality.

    Stoker on a 22" WSM

The 5 works ok, but if I was starting from scratch I would order the 10.

    Fired Up the 22

It will probably run hot the first cook, but 325 seems extreme. Then again, I don't know what your target temp is. Are you relying on the weber thermometer? Lots of people, myself included, have found them fairly inaccurate. I wouldn't worry too much about the smoke leaks, but I did put some...

    Fired Up the 22

Dan, How tall did you make the ring? I picked up a 2' x 2' piece of expanded steel, plus bolts and washers. I was thinking about making it taller, so it could hold more fuel for long cooks. By my calculations, making it 14.5" diameter (same as 18" stock) and 8" tall (3 1/2" higher than...

    Fired Up the 22

I've been thinking about doing what you suggest John. How do you cut expanded metal? I see a lot of the people that build drums use expanded metal for the charcoal basket. I think quite a few of them are as small, diameter-wise, as the 18" or smaller, but they are taller.

Temperature Differential Between The Lid and The Cooking Grate

Clay, Did you have meat in the cooker when you monitored temps? I think the meat can act as a heat sink early on, causing grate temps to be higher than lid temps. But I did end up ditching the thermo that came with my 22 because it was so inaccurate.

Is this a good wireless bridge for the Stoker?

If I was buying a new one it would be the Linksys WET54G as it supports WPA security. Most do not.

Have you cooked on the 22" WSM?

Jim, I'm going to try and use the charcoal ring from my 18" in my 22" for my next cook to see if that helps. Another member said that helps with fuel usage. I'm doing an overnight brisket Saturday and was planning on using the 18". I might try the smaller ring in the 22 and throw a couple of...

Stoker - Wireless communication without Internet

Can you elaborate on what you did? I entered the IP address and subnet in the alternate section, but I don't see what it does for me. I still need to change the main settings in order to connect to the ad hoc network. I actually just put it in the alternate section so I wouldn't have to worry...
