    I like that wooden table on your OTP. If I ever pick up a used platinum I would replace the table with marine hardwood ply.

    Mini vs 14 WSM

    I can easily fit 2 spatch-cocked chickens in the mini using both grates and maintaining high temps is no problem. But if I were doing 2 chickens, it's a lot easier for me to just do them on the UDS.

    Nice smoker! And no, I'm not afraid of galvanized steel, especially at the temps we're dealing with. I grew up licking lead paint and playing at the local landfill. I think my daily consumption of Diet Coke will kill me first, if anything....lol...

    Very nice. That's exactly what I did with my UDS. But on the mini I use the lid vent to insert my thermometer, and that approach works well too. :)

    Here's a different twist on the 14.5. By replacing the 14.5 smoker boby with a 16 gallon drum you can hang full slabs, no cutting.

    ^^^^ I agree, with a 14.5 wsm or mini and a 22.5 kettle you can pretty much do anything for a small family.

    Or, you can go even smaller and get the Cobb smoker....:)))) But, since building my mini-14.5 I haven't used the Cobb all that much as the mini is 100X better in all aspects.

    Or you can do this and use a 16 gallon drum on the SJ. I use this set up for hanging up to 6 slabs of ribs.

    I agree, I wouldn't bother painting SS. It looks good and is easy to keep clean.
