    Start Stock or Modded

Also, after the cook when the fire is out and unburned coal remains (I use lump), it makes it easy to grasp the ring/grate on both sides and give it a lift, a shake, a twist, and a bounce or two. All the ash will fall through to the cooker bottom. Then you can remove and set aside the...

    Grill Cleaning and Maintenance

There are several recommendations here for anti-seize. I'm using this food-safe one. IIRC, it has a ceramic filler. https://www.amazon.com/exec/obidos/ASIN/B00JRTBGBC/tvwb-20

What are your favorite BBQ tools? Best burger flipping spatula?

I use those tongs for putting coal in through the door of the WSB on long cooks. It's a nice length for that. Spatula and tongs - part of a set we got as a wedding present in '79. Used ~3x/wk. Made in Japan of wood/stainless and still going strong Thermapen - Classic Gloves - Showa 7714R-10...

I will just leave this here

I recently swept a 3 yr old Broil King 440 Baron to the curb. Everything that was stainless rusted out like crazy, the firebox most of all. However the powder-coated steel parts were fine including the cabinet. Odd.

    Graphing of your Cooks

@MartinB I agree. For me, one of the most useful benefits of the graph is on long cooks. When after several hours, the fan output seems to be increasing in order to maintain the pit temperature, it generally indicates that I need to add coal. For example, after things settle out, the fan...

    Graphing of your Cooks

[WSM 18] It's a good feature to be able to monitor temp control problems, e.g., overshooting, slow temp rise, etc. After a thorough cleaning of the WSM, I did a test cook (no meat) to determine whether the cleaning affected sealing and temperature control when using the ATC. It showed good...

First smoke on a 14.5" WSM

Lee, give lump a try - much less ash. If you are going to get a shallower water pan, you could think about making a new, deeper ring out of expanded metal. The extra clearance would allow you to make it taller - more room for coal. Check out some of the ones that have been made for the Smokey...

    Cooking right now. Heat control

It's easy for a certain type 😁 to obsess over temperatures, especially if when using a remote temp sensor with hi/lo alarms, etc. It can keep one up at night during those long cooks running out to fiddle with daisy wheels. However, great BBQ is made within a wide range range of temperature...

    Frame rust

Anyone ever squirt Boeshield T-9 internally in the frame to prevent rust? It's pretty common to use it inside a steel bicycle frame to keep it from rusting out from the inside. At least, it used to be before the carbon fiber and aluminum. I doubt it would do a wonderful job where the frame...

Long smokes, pit controllers, and the minion method...is this the best charcoal setup?

Also called a hysteresis controller. It doesn't have proportional control and can have a lot of overshoot depending on, in this case, how hard the blower runs in the ON state.

Long smokes, pit controllers, and the minion method...is this the best charcoal setup?

Yes. A slip-joint pliers is a permanent part of my BBQ kit - used to extract the can from the center of the grate. I then drop it into the chimney for cooling. Is it a bang-bang controller (or PID)?

Long smokes, pit controllers, and the minion method...is this the best charcoal setup?

I have always used the tin can minion method and have been using an ATC for my WSM 18 for a while now. It has always worked okay, though I never really liked the ATC blower air going in through one of the daisy wheel holes because they are located above the charcoal grate. As a result, the...

Products that you have stumbled across that were game changers!!!! Lets learn a few from each other

I use this thing all the time and for all sorts of things. It's out back right now next to the WSM holding up temp probes, an ATC and other "needed" BBQ items for the cook. https://www.amazon.com/exec/obidos/ASIN/B06Y67P4RC/tvwb-20
