First time smoking. EVER. Whole packer prime brisket and pork butt

Check out Smart and Final for bone in butts. They have the bone in Farmer John butts all the time. As for the brisket, You have that one covered with the Costco prime briskets. They are wonderful.

How many people will you regularly cook for. My 22 is a very big smoker and cooks a lot of meat. I am currently trying to find a 14.5 WSM on Craigslist since it is now mainly my wife and I.

Do you use a different sauce for Brisket vs Pork Shoulder?

For me, I don't use sauces on my brisket or pulled pork. If I am making a PP sandwich, I just put the PP on a roll with a Carolina Red Sauce and coleslaw. For brisket, it is great all by itself. Why ruin the great taste of the beef or the pork? Just my 2 cents worth.

    Klb vs Kbb vs Stubbs

Just what charcoal are you "supposed" to use in a BGE John? Is this maybe an elitist thing? Do BGE owners think they are better Weber owners? Just wondering.

Craigslist score and rainy night New Years Eve So Cal cook.

Speaking for myself John, I love my Vortex. Stainless is not cheap but I use my Vortex all the time and it just works great. My advice, pull the trigger on that Vortex and enjoy the results.

Great effort there Kemper. Only suggestion I could make is that you could have used whole wheat buns. LOL

Really like the look of that cook. Am I correct in assuming that the ham is a pre cooked ham? How do you like the CB roti?

    Interesting new items at Costco

I'm cooking a Costco prime tri tip this afternoon. We did two of them and a ham for Christmas and we had leftovers of ham but not the TT. It is a great cut and my favorite to grill.
