    Beer Brats

Bill; Those brats look excellent! My method is similar but a bit different: https://tvwbb.com/threads/poached-beer-brats-on-the-performer.58731/ Keep on smokin', Dale53 :wsm:

    Meatloaf on a plank, again!

By the way: The full recipe came from "The Plank Grilling Book" (available on Amazon). The ladies that developed this recipe were only comfortable with a gas grill. However, the recipe transferred to the charcoal grill without issue. One full chimney of Kingsford Original lit, spread evenly on...

Bill; Thanks for the kind words. I consider this one of the best things I grill! It is very popular amongst my family and friends. Keep on smokin’, Dale53 :wsm:

How long will frozen Spareribs last after going in the fridge?

Matt; I wouldn't have any problem at using those ribs just a day or two later as long as they are refrigerated. FWIW Dale53

    Instant Pot Chicken and Dumplings

We did this cook again this past week and, if anything, it was even better than the first time. I'm a bit disappointed that no one has commented on their experience with this cook. Keep on smokin', Dale53:wsm:

Chicken wangs, bacon wrapped jalapeños and moinks...Vortex

The Vortex is so easy to use and gets so absolutely great results on my Performers that it almost seems like cheating! :p :p:p Keep on smokin', Dale53:wsm:

    My Dutch build Mini WSM

I have been in on the building of several Mini-WSM's. I encouraged several friends and family members with "hands-on" help. Frankly, I think the proper home built mini to be a touch better than the Weber 14.5" WSM, but that is just my opinion. At any rate, they can do a SUPERB job of smoking...

    Tri-Tip from Creekstone

Russ; That tri-tip looks about as good as ANY I have seen! Good Job! Keep on smokin', Dale53 :wsm:

Only works when I’m on wifi.

If you have "VPN" you might try to disable that just to check. I have found the same problem with my iPhone. I use Chrome but it goes to Safari and gives me the same message as Cliff shows. VPN can keep from transferring a link... Just a thought, Keep on smokin', Dale53:wsm:

Has anyone added lower vents, Smokey Joe

I tried the Smokey Joe as a grill and could never get it to work well (however, the Mini-Smoker is a hit). At any rate, I found a Jumbo Joe and it is a REAL grill (both direct and indirect) and is a keeper. I often use my Jumbo as an additional grill when I run out of space with one of my...

My new Weber 57cm and vortex

Vortex wings are as good as it gets. My set up is a medium Vortex in my 22" Performers. Using the Vortex small end up full of lit coals gives you as good a sear as there is. Excellent for reverse sear, etc. FWIW Dale53

    Cold smoking cheese question

I really enjoy cold smoked cheese. We have found that we prefer (YMMV) using the Amazen smoke tube for 1.5 hours of total smoking. https://tvwbb.com/showthread.php?48136-Cold-Smoking-Cheese-on-the-Mini-Joe-Gold&highlight=smoking+cheese Keep on smokin', Dale53:wsm:

    Weber Firespice Cedar Planks

I flat out LOVE Cedar planked Salmon and Steelhead. The two best types of Salmon are King Salmon and Sockeye Salmon IMHO. Meatloaf on a plank is another of my favorites. It raises meatloaf to the gourmet level. I try to buy Cedar planks when they are on sale and stock up. Costco starts their...

    Weber Pellet Grill

One thing I have never seen mentioned. How much does it cost to run a pellet smoker. Pellets aren't cheap and I have no idea how many lbs. of pellets are used in a long cook. Can anyone help me? Keep on smokin', Dale53:wsm:
