    Jalapeno chicken...

Sorry, the title sounds better than the meal itself. I got the chicken cooked nicely, with a crispy skin and still moist (Bone-in skin on chicken breasts are pretty good). Grilled indirect, finished direct. Served with some grilled cubanelle peppers, served with S&P, olive oil, lemon juice...

    Rack of Lamb

Marinade as you wish (I like red wine, crushed garlic, chili flake, thyme and olive oil)...also like to rub mustard on the outside. i'd start direct, bone side down. By that, I mean if you're laying it flat, the rib bones are arc-ing downward. give it 4-5 minutes, then flip and another 2...

Happy 4th, here's my burger tribute

FYI...it was home ground chuck for the patties. And on the bun was fried onions, mushrooms, avocadoes, tomatoes, onions and lettuce. My wife actually did all the cooking, so I just sat back and drank beer.

    Hanger steak

Hello all, I got my hands on a nice hanger steak from a butcher. I've really been wanting to try one of these at home. The only time I had one was a few years ago at a restaurant, and I really enjoyed it. Here's the slide show: Hanger steak It was a really nice steak. There's a membrane...

You're lucky your wife knows how to use the kettle. It would be helpful if mine were more comfortable with the charcoal grill.
