St. Louis Ribs - Whats your favorite time/temp combination?

275 is a better temp for ribs, the connective tissues are hard to break down at 225. Most videos you see now recommend 275, definitely wrap if you want the fall off the bone

    ThermoWorks Billows

I just got the billows system, it held the temps perfectly all day... except for the fact the actual temp was close to 50 degrees off from what the air probe said on channel 4. I didn’t figure this out until way late in the cook, it seemed to be taking way too long so I checked the grate temp...

    InstantPot

I’ve used my 8 qt instantpot to make some pretty good weeknight St. Louis ribs before. Simply prepare as usual and rub, put1 cup of water and the rack in the bottom along with the rolled up rack of ribs. Pressure cook for 20 minutes letting it naturally release for 5-10. Take them out and...

Here is a link to it, although I’m not really impressed with it the magnet isn’t very strong and it swings out easy when not in use. I’m actually going to remove it because I bought a ThermoWorks signals system with billows , going to put a magnetic shelf in its place to hold the new unit...

    Lump in the WSM

I bought a 40 lb bag of this stuff for $13, it has some seriously huge pieces in it like 3”-4” diameter logs. It also has a lot of small pieces, I use the big pieces in the bottom of my WSM covered with briquettes, then I use the small pieces in my kettles.

I haven’t cooked on it yet, but I have them adjusted so it doesn’t put much pull, just basically holds it there right in place. The primary purpose for me is so I can grab it by the handle and wheel it around without the barrel falling apart.

    Question on vent management

Seems like leaving the top vent fully open would use more fuel in the long run, with my ATC I close top vent to about half or less

    Lump in the WSM

I’m planning on doing a mix... I bought a bag of lump that has some really big pieces in it, I think I’m going to place some of those big pieces on the bottom with some wood chunks and cover it with briquettes. Then dump a half of a chimney of lit ones on top to get it going. Also planning to...

    Best size

Harry soo says if you overload the 18 you can choke it out, he recommends the 22 for multiple full packers etc.

Great suggestion, they seem pretty sturdy but it definitely wouldn’t hurt.
