    Mold already!!!

I generally don't clean out the water pan after a cook (usually on Sunday, cook done late, it's barely cool enough to move to the garage by the time I go to bed, and no change to deal with it until the next weekend), and I almost always find some mold in/on the remaining water. I just pull the...

    Dinner: The Bacon Hades Burger

To be fair, these had been seeded before being added to the cream cheese. There were about 3 1/2 peppers in 4 oz. of cream cheese, and I had about 1 ounce... so that's a little less than one pepper on my burger. I definitely had to blow my nose a couple times while eating! Oh, and this morning...

    Dinner: The Bacon Hades Burger

I posted in an earlier thread about making some bacon jam in preparation for tonight's dinner. I present to you, the Bacon Hades Burger! Let's start with a buttered, toasted sesame seed bun: Slather the bottom bun with mayo (because why not), the mid-rare burger with bacon-onion-poblano...

Gonna name a mountain after a truck

The mountain had pretty much always been known as Denali by the indigenous people of Alaska. It was change to McKinley in 1940 as a merely political move in spite of protest by Alaskans to honor McKinley, who never even set foot in Alaska, let alone had any connection to the mountain. Alaska...

Need help calculating Cure #1 amount required in apple brined turkey recipe

I think the recommendation is 1 teaspoon per 5 pounds of meat, regardless of the variety. So you're looking at about 2 1/2 tsp. for a 12 pound bird.

I couldn't afford the wood to fire that thing if someone gave me the smoker!

Started on Monday's dinner a little early!

There's a pound of bacon and 4 pounds of onions in that little plastic container... I would bet good money that even a competitive eater would have a tough time finding the bottom in one sitting! I'll post burger pics tonight :)

We ordered from Amazon, but it shipped from England. That that may have changed since then, I see it's available with Prime shipping now.

    Dirty Cajun Bandit door

Barkeeper' Friend is good. We've been using the stuff below for cleaning our stove top that gets trashed every week - we use our stove *hard* ;) It's made in and ships from England, so it takes a couple weeks for delivery. It removes the most stubborn, burned on messes with very little...

    Solo Wednesday: my favorite pizza

Hey, I've lobbied for a wood-fired pizza oven in the back yard, but so far I haven't had any luck getting any traction on that one :D

I found this one on the Internet while looking for ideas for hatch chilis. ETA: Chrome on my iPad locked up every time I tried to add a link to the recipe: Bacon, Onion and Green Chili Jam
