Stupid question alert. It wasn't the MatchLight, was it?

    New WSMs for 2009

Chris - 1) Is the access door design same as existing model (better or same seal)? 2) I sometimes set up my WSM for grilling (charcoal in middle section). Does it look like the new 22 will support that scheme? Thanks for the early look!

    Dallas Barbecue

+1 on Sonny Bryan's Inwood shack. My most recent visit was in January - still very good, honest BBQ in a no-frills site. Get there by 11:30. There are a hundred other corporate Q places that are OK, better than what we have in NY/NJ, but not as good as your backyard cook.

how do you start your charcoal/lump?

If you don't have a side burner, you can find one of these on sale at a big-box sporting goods store for $10-15: http://www.acehardware.com/product/index.jsp?productId=1290166 3 minutes is all it takes.

    Tri-tip no fat cap?

I just tried the Morton' tritip from CostCo last night. No fat cap. Grilled it on medium. Very tender, I think they overapplied the papaya. And it was salty to my taste, but my son loved it. The only place I can get plain tri's is at Trader Joes.

    Ribs/Chicken Combo Question

    Ribs/Chicken Combo Question

I do this same cook frequently - nice combination for the guests. The ribs get a light sauce glaze, then quickly wrapped, and then sliced about 1-2 hours later. Sometime I hold in the oven at 170, sometime just in a cooler w/ newspaper. After the ribs are off the grill, open all vents 100%...

    Buying wood online

I bought pecan from Nature's Own last year. Very satisfied with product and price. I've purchased alder, apple & cherry from Cabela's. Also very good. As I smoke more, I'm finding that less is more, and I'm probably using half the chunk count that I used to throw on (2 or 3 small ones).

    Increase temp

Try the old Weber kettle trick: Tilt your lid open a crack. It typically gets me 25 more degrees on a hi-temp cook.

    Clay pot and temp control

My temp control became a lot more effective when I taped the door shut w/ aluminum tape. I burn lump and it's very sensitive to air supply. No matter how tight a seal you think your door has, it doesn't. If you're running waterless, you'll have no need for the door anyway.

My blow torch blows, how do you do it?

Some Weber gassers come with a side burner designed especially for lighting a half-chimney of lump

    Basic rub recipe ?

This is my house rub, courtesy of Goode Co. BBQ in Texas. I add very little salt, cut back the paprika a bit, and add a dash of ground chipolte. I triple the recipe anounts whenever I make a batch. It works very well on brisket, butts & ribs: 2 1/2 tablespoons dark brown sugar 2 tablespoons...

    GURU Jacket Users!...???????

Here's a home-made jacket. Not as pretty as yours, but no smokey/gooey buildup either: Photo http://mywebpages.comcast.net/540perry/540perry/Misc/20...62856AA_edited-1.jpg Thermo http://mywebpages.comcast.net/540perry/540perry/Misc/20...62944AA_edited-1.jpg Guru...

    Need San Antonio BBQ recommendation

I'll be in NW San Antone next week, have not been down there for some years. What are the favored Q places these day? I remember a place up in Boerne, just off the highway, kind of a family dive that was great. Any suggestions appreciated.

BBQ Guru Pit Minder vs. BBQ Guru DigiQ II

I have the PitMinder - picked it over the others because I just wanted temp control, didn't need the other features, and the price was right. It is reliable, keeps a steady temp, and you'll get much longer unattended burn times than with the standard water pan set-up. It's important w/ any of...

    Smoking in the rain...any suggestions?

A piece (or a roll, more likely) of Reflectrix from HD or Lowe's can be used to make this crude but effective smoker jacket, which will do the job ir rain, snow, wind, etc.: Schematic http://mywebpages.comcast.net/540perry/540perry/Misc/WSM_blanket.jpg Photo...

    NEW AND IMPROVED WSM !!!!

+1 on tightening the door (or lose it altogether). A way to nest oven gasket in the seams to tighten the unit up (air control is everything). With those changes, no water pan is necessary, so either a Piedmont pan or other type of baffle. 1 additional lid vent and 1 or 2 additional bottom...

    Smoking Chunks in New Jersey

Hickory & mesquite are at any Big Box, I've used Cabela's for other woods. They don't kill you on shipping and it's quality. My front yard also has a pin oak and a maple which got pruned earlier this year Maybe your new neighbors need some pruning help too.
