    Competition Thighs

WOW, I have been doing thighs for some time since I learned about them here. I have never had the skin stay in one piece on the thigh like that. They look great! Good luck on your competition.

MMM, I like the way you roll. I have never had Dungeness crab. We don't see it here on the East Coast often

What is WSM Smoke Day 9?

Are the aprons pretty good sized, some of us are a maximum density ;)

What are you using for rubs?

I use a lot of desert heat, which is a wing rub they use at Buffalo Wild Wings. If you add it just prior to eating you get the heat but if you do it pre cook it really mellows. I love it on chicken, fish (just a little) and ribs. Other times I mainly make my own

    Jalapenos on the WSM

I think it is too high but that is just my experience doing it a couple of times.. You can find cheap hotplates probably less than 25 bucks. I grow a lot of peppers, I have 16 jalapeno plants now. I think 2-3 chunks of hickory would be too much at one time do one at a time. I didn't want the...

    Jalapenos on the WSM

I have done it a few times. There is a great write up here http://virtualweberbullet.com/chipotles.html . My first time was with just a few brickets and smoked them at 100 or so degrees. The second time I bought a cheap hotplate and set the smoker up like shown at that link, keep the temps...

    Throwdown #12: Ribeye Steak

I think this will be my first post with an actual cooking shot, no plated pics :) Sam Summer is flowing ;) The attendees. A bone-in Ribeye for me. A butterflied filet for the Mrs. The stage, using my Performer and my second cook on my Craycort CI. I can't get my chimney in the so I...

    Craycort

Because of how much I might cook and not the quality of the product, right? I was tempted to get the vegetable wok too.

    Craycort

Thanks a lot guys, reading this section just cost me over 100 bucks. Just ordered the Craycort CI and griddle. Not a weber accessory but an accessory for my weber ;). Looking forward to them. I used the Amazon link so the site gets a benefit.

    Grease Pan Rail Fix

You're a better man than I am. I tried exactly what you are doing and ate through numerous carbide tip drill bits until I finally bagged it. It broke my heart to take my old genesis to the dump. It did make room for another one though :)

    My Ribs

I fought to keep it at 225 to 250, it was windy here in Va yesterday. I really burned through the fuel. This was my second attempt at beef ribs and far better than my first but I eat my mistakes. I think the beef could/should have gone a little higher in temp to 190 and the would have been a...

    My Ribs

I did some ribs over the weekend as well. I bought two rack of baby back and two racks of beef shorts. Put them on the smoker and let them go for 6 hours. The beefs were at 180. I had pork on the top rack and beef on the bottom. They were yummy, I haven't uploaded all the pics yet but here...

Achieved my only New Year's resolution: Bone-in Beef Short Ribs

They look awesome, I just found that there is a Restaurant Depot 10 minutes away from me, I am headed there now :) Edit-->>> Well they don't open until Feb 27, so I will have to wait. My birthday is Mar 1st, maybe I'll cook some then

    Rocky Mountain Oysters

Reminds me of a joke where a man went to a restauarant and wanted these outside of a bull fighting arena. He was told he had to get on a list and come back on a certain day. He came back placed his order and when he received his meal they were much smaller than he had seen before. He asked...

Question about wings on the 22.5.

Like Jeff said. I cook them on a grill, add a touch of smoke until just done. Then fry them for 2 or 3 minutes to crisp the skin. I then do some with a spice rub from Buffalo Wild Wings called Desert Heat, I also sauce some and toss. I'll be doing this Sunday when Baltimore whoops up on the...

    Crab stuffed beef tenderloin

A couple of years ago I did a crab stuffed beef tenderloin for Christmas, I thought the recipe was from a weber cookbook but I can,t find it. My next guess was it was from this site but I can't find it here either. It was a whole beef tenderloin butterflied with crab, cream cheese and some...
