    Any chance the meat you used was enhanced? Referring to added water during processing, and sometimes other ingredients are added to pre tenderize as well, which all are added so as to reduce cooking time, tenderness....but when smoking these cuts if that's what you have to work with, you need...

    Thinking of modding a gas rotisseire kit for my Weber Charcoal Grill...thoughts?

    Thanks Jim! I've been scouring my local Craig's list, to no avail, but you never know...one may show up soon. In the meantime, I just sent Weber an email asking if they will sell me the ring only, by sending them the same pic I posted here, so they could see the parts I have and be able to...

    Thinking of modding a gas rotisseire kit for my Weber Charcoal Grill...thoughts?

    I wanting to try my hand using a rotisserie on my Weber Performer. I have this gas grill kit that contains the motor, spit rod, spit forks, counter balance weight, etc. If I was going to make this work for my 22.5" Weber Charcoal grill, wouldn't it be easier if I bought the ring Weber sells...

    Santa Maria Style grills at Costco

    Love to be able to buy a Santa Maria Style Grill Thanks for posting up this thread Chris!, the Costco version looks a lot like an econo Grillworks (grillery.com) to my eyes, and I'd gladly shell out $300 for one. Not sure why we don't see these available in Fla., or are they here?...anyone?

    Brisket (Packer) on my WSM 18.5

    Thanks for all of the attaboys! It was a fun cook but thoroughly exhausting<LOL> I normally keep late hours, going to bed around 6 or 7 AM, then the mornings when I have to ship at GNV, we try set up the shipping time where we have to be there at 5 AM, so I can come back home and get to bed...

    Brisket (Packer) on my WSM 18.5

    Here's an update JR...before leaving for the airport, I read where Case did the Dutch Wicked Baked Bean recipe for his July 4th get together...it sounded like a good recipe so we stopped at Publix grocers in Gainesville to pick up ingredients...when we got back home, the pit temp was 208, then...

    Baked Beans on the Grill

    Nice stuff Cliff...I've always wanted to use a cast iron Dutch oven outdoors, and although I have a very nice Le Cruset Dutch Oven, I want to try the un-coated Dutch Oven...someday, and when I do, I'll follow what you did here

    Roadside Chicken and grilled corn salad

    Like all of the others respondents you've had here, I'm going to have to try my hand at your marinade, recipes... But what I was wondering Case was your opinion of using the smaller grill you used to cook on, vs. using something like the 22" Weber kettle (which is my go to grill), are you...

    BRITU, First Time For Father's Day...another epic smoke=:-)

    ~~~I misread your question Chuck...yeah, all the coals you see were new Kingsford coals that were lit up in the two Weber Chimneys in a previous pic, now there was about 3 pounds of salvaged coals underneath the coals you see here, but the coals you are looking at, they got white hot before...
    BRITU, First Time For Father's Day...another epic smoke=:-)
    I had a few other snags but nothing I couldn't over come like when I set the 18.5" WSM middle section on the bottom and all the fat from the chicken I've been hanging off the Weber Expandable rack (since early spring) caught on fire...bad part there, I had the grill set in place with my...
