Near disaster with chicken leg quarters

Hmmm I didn't know it was considered "bad" to not trim chicken and let all the grease accumulate in the water pan. This is how i always smoke chicken thighs, and I have never noticed an "off taste" in the food.

    Peach-Habanero Sauce

Wow that's scary. I'm not sure why someone would even consider eating something like that unless It's just a "wow I'm so manly" type of thing. I can see the habanero in small quantities but the ghost chili and stuff like that should just NOT be consumed at all in my opinion. I may go to the...

    Peach-Habanero Sauce

It sounds like you haven't had much really hot, spicy food, Bryan. Some say they never want to go there. I'd suggest you go ahead with the sauce and adjust it after the fact if you find it's too much for you. And remember, you're getting the worst of it from the seeds and veins. If you...

    I can't sleep when I cook overnight.

I used to have this problem, but once I realized the WSM is safe to cook with and won't spontaneously start a fire, then I got over it. the WSM is designed so well, I'd be shocked if it started a fire. The fire seems to be contained very well within the unit. I also cook on a tile walkway so...

    Peach-Habanero Sauce

Man I started to make this this weekend, but I got freaked out halfway through. I started choking from the fumes as I sliced open the habaneros. I used food safety gloves and did all that stuff right, but I got paranaoid that I wouldn't be able to handle the heat if I couldn't handle the...

Warming Sauce up in Cooler with Pork

Hey all, I took Jeff's suggestion and warmed the bottle of sauce by placing in a saucepan of warm water. This worked very well, and the sauce dissolved right into the meat. I like for my sauce to work its way into the meat rather than sitting on top of the meat. Thanks for your help.

    Playtex Clean Cuisine Gloves

Hey thanks all, I used the clean cuisine gloves yesterday, and it did not leave any sort of taste on the pork at all. Jim McK, thanks for responding so quickly. It was reassuring to know I could use these gloves safely.

    Playtex Clean Cuisine Gloves

Does anyone have any experience using these to pull pork, or handle food in general? I bought them today for pulling pork tonight. Having over a bunch of people and I have a cut on my hand. Don't normally use gloves but didn't want to risk it. They say they are designed for handling food...

Warming Sauce up in Cooler with Pork

Can you microwave a glass bottle? (serious question) I usually only microwave plastic or ceramic containers.

    Peach-Habanero Sauce

Uh oh...now if this turns out to be awesome, I will have given away my secret, oh well. Well if anyone has tried or decides to try this, let me know. I am thinking of making it this weekend.

Warming Sauce up in Cooler with Pork

Hey all, I've recently gotten into trying to make my own sauces. I've started to bottle them in glass jars that originally came to me as store-bought bbq sauces. Anyways, it is a cider vinegar/ketchup base sauce, and it is refrigerated now. I like to sauce my meat as it's pulled as it soaks...

    Peach-Habanero Sauce

Has anyone tried This? Looks intriguing. I love Peaches and it's Peach season here in SC. I had a Mango-Habanero dressing at a restaurant last week and liked it very much. I'm interested in non-traditional BBQ Sauces so I thought I'd give this a try. Has anyone ever tried this recipe or...

    R.I.P. Brent Walton QN4U

Just saw Brent on BBQ Pitmasters season 2 the other day. Had no idea that he had passed away. Wonder what the cause was - the article didn't say.

    What grade are Wal-Mart Briskets?

I think that's a big difference that helps explain the regional preferences in BBQ. In South Carolina, brisket is hard to come by and it is significantly more expensive than pork butts (about a 1$ per pound more at least). So the perception, at least, is that east coast people like pork better...

    What grade are Wal-Mart Briskets?

    Ketchup based sauce recipes

Have you ever tried#5 Sauce? I haven't tried it myself but I hear it's very good. Basically anything with ketchup and cider vinegar as the base seems to be a good start. Some people like the straight vinegar sauce, but that's a little too strong for me. I'm in yellow mustard country here in...

    BBQ Pitmasters season 3 premiere

Thanks Steve. That sounds like an improvement over Season 2 in my book. Like I said, didn't care for the host so I'm glad to hear he's gone. I liked Tuffy alot in Season 1 so glad to hear he's a judge now. Is Aaron Franklin the owner of Franklin BBQ near Austin, Texas? If so, I heard that...

    BBQ Pitmasters season 3 premiere

Is it the same judges and host as last season? I thought Art Smith and Myron were good, but didn't care for Warren Sapp or the host. The host seemed to say all the phrases in the exact same tone and facial expression each episode. As in "The loser of this contest will be eliminated." I...

    What grade are Wal-Mart Briskets?

All right you guys have convinced me. I'm going to HH with my brisket this weekend. I'm also going to use Pecan chunks and put them all on top per the HH brisket instructions. Wish me luck!
