Taking pulled pork and ribs camping

Do you have a vacuum packer? If so the pulled pork could be reheated in simmering water. Ribs would probably do better over the fire just be careful, it will be cooking hotter than your grill over open flame.

Favorite food when your not feeling well?

Tomato soup and grilled cheese does sound good. Had some Brunswick stew in the freezer that we had the other night with grilled cheeses. Also had oatmeal for breakfast this am. Think I might call in some hot and sour soup tomorrow. I hope this thing goes away soon. I don't feel like going to the...

Favorite food when your not feeling well?

My wife and I both are not feeling well. I guess it's just a bug going around. It's not so bad that I don't feel like cooking though. We already did chicken noodle and today her mom brought us some potato soup. Any go to feel better foods or recipes?

    Fried walleye, dipping sauce, hushpuppy?

Our summer long fishing tournament came to an end on labor day. We are having the awards banquet tonight. It will be about 30 of us. I was the organizer and I will also be doing the cooking. I'm making Cole slaw, Barbies beans, German potato salad(a request), tartar sauce, fried walleye and...

Best BBQ Book(s) - What is your "Bible"?

Smoke and Spice was the first BBQ cookbook that I ever bought and I read it cover to cover. It has a lot of good info and techniques in it. I have a bunch of other ones. My latest is Cooks Country's Favorite Grilling Recipes. It has a lot of recipes that we talk about on here. But I also agree...

    High Heat Butt Cook Experiment?

This was a good learning experience for me. I have never done the high heat or empty pan or sliced. I can say that the sliced butt was very good. I was happy that I could get a decent BBQ pork product in that short of time. Probably around 7 hrs at 285. I pulled it off at 170 and foiled it and...

    High Heat Butt Cook Experiment?

They are at 169 now. 3:39 pm. They have definitely hit a plateau. I've never done sliced pork before so I'm pulling and foiling one butt now for that. My sister wanted one for dinner so I'm going to foil that one and let it cook until tender. The other eight are going to stay on unfoiled until...

    High Heat Butt Cook Experiment?

I've got them kind of in a triangle configuration on there sides. When I do six I usually do 3 on each rack with the larger on top. But this is my first higher heat cook. I try not to open the cooker but I thought I might would check to see if the smaller butts had shrunk enough to lay them...

    High Heat Butt Cook Experiment?

I had the itch to smoke something and my friends have been bugging me to make them some BBQ. I have a new job so I have had little time for the WSM. This might be a little long winded. I bought another WSM a couple months ago and hadnt used it so now is the time. I went to Sams and bought a case...

    Fajitas for 60

I've never "grilled" brisket but I have done plenty with the high heat method on the WSM. It could be done in 5 hrs but that would leave you little room for error and rest. If you could start early enough you could make a fajita rub and smoke those briskets in your WSM until tender then wrap in...

pulled pork for 40 - what have i gotten myself in to? *UPDATE: Butts are DONE

If you cook to tender they will be falling apart. What I do is take a foil pan and line it with foil. Take my tongs and grab a butt off the smoker and set it in the foil lined pan and wrap it up with the excess foil. Sometimes it takes two layers of foil.then I transfer to the cooler. Do this...

pulled pork for 40 - what have i gotten myself in to? *UPDATE: Butts are DONE

You will be fine. I do cooks similar to yours all the time on my 18.5 WSM. Around here I get the twin cryovac pack butts from Sams Club. They most likely will average 14-16 lbs per pack. You can fit 3 on each rack if you put them on there side in kind of a triangle. They may touch a little at...

    Best Philly Cheese Steak Recipe?

I attempted these last weekend. While not the sandwich I was going for it was still very good. I was going to be out of town at my trailer at the lake so I waited to buy my meat there. There is a nice little country store with a meat cutter that I have gotten to know. He wasnt there and none of...

    Best Philly Cheese Steak Recipe?

Thanks guys. As usual I think using the best ingredients you can find is key. I'm. Planning to get some hard hoagie rolls they have at Sam's. I know what you are thinking but I have used them in the past and they make them fresh plus I have to go there anyway. Next I'm going to get the meat and...

    Best Philly Cheese Steak Recipe?

My wife picked up dinner last night from Dominos and she said she was thinking about getting their cheese steak sandwich but got us pizza instead. I told her that I would make her one this weekend so Im trying to do it the best I can. I've read some recipes and some articles and somewhat got a...

What do you add to the No. 5 Sauce

I add a little honey and use it in the BRITU recipe. If you add a little horseradish and hot sauce its very similar to Peter Lugers Steak Sauce.

    High Heat Chuckie Help?

Thanks Kevin. As soon as I posted I went and checked on them the smallest one was at 167. The 2 larger one but just a little larger were at 160. I decided to foil probably about 10. I checked them at 10 35 and they were mostly tender. A few spots weren't like butter but most were. I have them...
