    Full Size Brisket On An 18" WSM

    I always use a chunk underneath the brisket to avoid water from collection on the brisket but it's not really getting shorter, just some inches.

    OK - old thread but ... My 22.5" WSM is 2012 and my 18.5" is 2005. A C code would be a dream ... but hard to realize here in Germany.

    I'm also fighting the mold issue. My 22.5 WSM is stored with open vents under a roof (Pavillion). Last year without the cover -> mold. This years with cover --> mold. I have no idea anymore. I now try to store the middle section upside down as mentioned in the thread before. I can definitely...

    Im sure it disappeared in October. I got an old vintage catalog and checked if it’s already available (It was) I got the catalog in the beginning of October. A few days later I couldn’t find the section anymore.
