    Flank steaks do not need a lot of time cooking AT ALL. In fact if you over cook it, it will be like shoe leather. I would cook over direct high heat for 3 minutes per side or so lid on. That will get you a pretty good medium rare..make sure to cut across the grain! Hope this helps!

    Thermapen Question.......

    I actually haven't quite figured out the best way to read with a thermapen either... This is good info to see what other people do! While it is accurate it jumps around quite a bit..maybe it's because I got the black one

    Nomex flight gloves

    I also got welding gloves from Home Depot and they work awesome..and only around $15.00 bucks I think? I haven't juggled hot coals with them yet...but I have removed hot racks and stirred around coals and added more coals to the fire and didn't feel a thing..

    The only time I have had success pulling/shredding chicken is by poaching it in water....so this is a great question! Can't wait to hear an answer!

    Genesis E-320

    Hey Gary, I just got a EP-310 from Ace and am really liking the SS grates...I have had both in the past, and SS are much more low maintenance and will last forever. It takes a bit for them to warm up to temp but they give awesome grill marks! If you can get an EP edition you should go for it...

    Applying dry rub to ribs. How do you do it?

    I also slather in mustard, then apply rub both on ribs and butts. I honestly just like the color it brings out on the rub/ribs...It might not do much else, but it's just personal preference. I also think the vinegar in the mustard tenderizes the ribs a tad bit? Just my personal thoughts!

    Definitely under done...a good way to tell they are done too is the meat should pull away from the edge of the bones about 1/4 of an inch
