    As before stated if you ditch the water you will get a longer cook out of 1 load of charcoal. I've only had my WSM for a few months and used water a few times. When I experimented with out it I found I didn't really need it and haven't used it since.

    I would be curious also as to what chips you were using? I use chips a good amount for grilling and have done it for smoking when I was out of chunks and never had a problem.

    I've gotten mine at lowes or home depot before. Usually the weber brand but as of late I just take a branch off my pecan tree or orange tree.

    Water pan empty or full?

    I've been experimenting with this and with out water I have yet had a problem with temps climbing when I didn't want it to and the bbq was still moist. Take note that I'm not the most experieced tghough and have only had about 30 cooks on my wsm.

    I have the same problem. I love tri tip. I use the same simple rub on mine to, I like to taste the beef.

    WoW! That looks delicious. Did you cook the butt until it was ready to be pulled or a little earlier since you put it in the skillet with the sauce.
