    It’s a looker. Not sure I like the handless design from a keep it clean standpoint (I cook a lot). The dispenser behind the door is way cool.

    Pork Butt - should I cut it.

    It’s going to end up as pulled pork with vinegar sauce. I’m just cookin’ the pig and making the sauce. Going to start it about 6AM Sat morning due to new fridge delivery on Friday. Figuring on 12ish hour in the smoker followed by a long rest in the ice chest.

    Yep they do. However, I have a Weber sharp edge spatula and I can flip them easily. Also remember to refrigerate the meat balls before cooking. That allows you to smash them without loosing all the juice.

    Agreed. I would serve a lager. Lagunitas Brewery is a mile down the street! I get PILS. While not a giant hops fan, their IPA is good too.

    Most likely the E6 but I also have a Smokin-it model 3 electric that does wonders with pork. I just need to decide.

    Dual Weber crafted griddles on Genesis 400 series?

    I have the Genesis 335 and got the full size griddle. Can swap it out for grates. I can use it on high without issue. Not sure what you plan to do with 2 griddles, but I am really happy with it. Best part is, I can swap it out for the grates.

    No cheese? We do a 2 ounce beef ball and a 2 ounce pork ball with grated cheddar and pepperjack in the middle. Buns are always toasted.
