    **Rib-O-Lator on the Cajun Bandit**

Brian, I like toys! I like the idea of the food rotating through the cooking environment for even cooking and increasing indirect cooking space. Besides cool factor, are there other benefits worth noting? Gary

Tips on custom kettle/wsm table enclosure

Phil, My design, and my build. It is nice to know it has inspired someone! It is framed with galvanized studs that were pop-riveted together, sided with concrete board and finished in stucco and tile. The entire build was around $800. Rich, My biggest gripe with my build is cleaning the...

    Wild boar

Nearly 200lbs of wild boar is about to land in my freezer. I have been designated with the task for figuring out the learning curve for preparing this mass of meat. I have a decent idea about some prep and cooking techniques required for the leanness of this meat, but does any one have any...

Will this fit in my WSM and is it enough?

Ed Mitchell (hot and fast) Spare Ribs

I don't know how he gets them done in an hour, but I cooked three racks this past weekend at 350 - 375 indirect and they were done in 2.5 hours. The meat pulled clean from the bone, but the meat had a different bite to it. By different I don't mean to imply a negative. The ribs were good. I...

    Orange Marmalade Sriracha Wings

I got into the habit of purchasing whole fryers every week and breaking them down myself. Buy the same size birds and the wings stay fairly consistent, and they add up quick. Larry's recipe came along at the right time. They were adding up, and the typical wing doesn't 'fly' around my...

    How long until a Refuel?

Unless my fuel has been compromised by this FL humidity I am confident a full ring (quality lump or briq) will hold temps 15 hrs. It is not uncommon for longer burn. I doubt it has to do with putting hot water in the pan. That would conserve fuel. Gary

    French Press...I'm Impressed

Discovering the french press was a lot like finding the wsm. For very little $$ and a little info the results are very rewarding. There is a big difference in freshly roasted coffee beans, and different beans from different parts of the world, and the equipment to get all done; but if you...

Tim, The cuisinart has a burr mill that is about $50. It does the job. Gary

    French Press...I'm Impressed

Yes! French press is a different animal then the standard drip coffee maker. Most standard coffee makers have trouble acquiring the heat necessary for the coffee to bloom and extract flavor. Before you make a final judgment on the French press, increase the size of the grind until you loose...

You know you're into Barbeque When..... *****

.... when you don't mind doing hard labor in the backyard, because you know you will be near the patio, thus the smoker and the kettle, and the lingering perfume of good things gone bye and the next to come. Gary

Can the bark on ribs be too thick?

I think you both are right depending upon the rub. Gary

    question ?

Chuck, Unless the weather is an issue and zaps heat out of the cooker, I find the wsm has no trouble running these times and temps with the need for additional fuel (I am speaking of the ring of an 18" filled to the top). Follow Pat's suggestion and you should be good to go. My backup plan if...

    My kettle setup

Nice job Joe! I did something similar a few years back. I went with the ceramic top as mentioned by George. I made use of the brackets that were used to mount the kettle to the cart to set down on the counter. This gave me the option of having about and inch of air space around the kettle...

so unimpressed by thermapen build quality

Pinny, I am in your camp here. For the money it should be a little more water resistant then it is. I sent my first one back because it malfunctioned. They claimed the electronics had gotten wet. The only liquid it came in contact with was from washing the probe, and I was careful at that...
