16 oz prime rib eyes reverse seared on the SmokeFire........or not!

Did my monthly shopping at Sam's Club the other day and found crazy good deals on an 18 pound prime brisket and 2 16 oz prime rib eyes. Was supposed to smoke the brisket last night but the event got canceled due to COVID so it's in the freezer to smoke another day. Decided to reverse sear the...

    Vacuum to clean SmokeFire

Searched and couldn't find a post on this. Prior to buying my SF I just picked up my Weber kettles and dumped the charcoal ash in a trash can. Can't do that with the SF so I tried my shop vac and a cloud of dust blew out and luckily I was outside. It was one that has the cloth filter with a...

Scotch eggs smoked on the SmokeFire

Scotch eggs smoked on the SmokeFire then placed in a nest of hash browns and topped with country gravy and served on our finest china. A lot of work but so worth it. Sorry no action shots as it was 19 degrees out there this morning.

Any advice for first cold weather long cook of the year

I have a WSM 18 and at that temperature I need 20 briquettes to hit 225 to 250 in a reasonable time. Once at the desired temperature the DigiQ holds it like a rock even in a blizzard. It's 25 degrees here in Northern Illinois with a slight wind and I was going to start an 18 pound brisket...

    Front Shelf for EX6

Unpackaged and installed the front shelf this morning. Here’s a few comments and initial thoughts. The directions say all you need is a screw driver but you also need an allen wrench or other tool to loosen and tighten the front screws on the barrel that the shelf bracket attaches to as well...

    Getting Forced a Different Direction

The cost of pellets versus charcoal really stands out on long overnight cooks. An 18 pound packer brisket can take 24 hours and a bag or more of pellets depending on the outside temperature. I decided to stick with Weber pellets at $16 a bag since every time I call Weber support with an issue...

    SmokeFire Performance in Cold Weather

Yep I've got a Thermoworks Smoke for that. If I don't get any response I may chicken out and use my WSM which has never failed me in weather a lot worse than this. I've got an 18 pound prime brisket that I want ready Wednesday evening.

    Giant Snickerdoodle

Joan – you really made my wife’s day! She’s been in bed sick the last two days and only eaten a few scrambled eggs. I saw this recipe and was shocked that we had all the ingredients including Cream of Tartar which I’d never heard of. It was actually very easy to make and as I was taking it out...

    SmokeFire Performance in Cold Weather

Anyone have any experience with the SF in cold weather? Planning an overnight brisket cook tomorrow night and it's supposed to get down to 21 F and wondering what to expect. Assume it will use a lot more pellets than warm weather so planning on checking in on it a couple times during the...

What is best controller for WSM?

I use my DigiQ on all of my WSM cooks. I've used it in rain, snow, heat, wind etc. and it works great.
