    Rib rub or no rib rub thats the Question

    Yeah, my first time smoking ribs I didn't use any seasonings at all. I remember the meat came out bitter from the smoke wood (mesquite). I don't think I used a sauce though - that likely would have helped.

    question about smoking with wood chips

    I frequently see a debate about whether or not to soak wood chips before tossing them onto your coals. Those who are in favor of soaking say that you should do it because otherwise the chips will flame up instead of smoldering. What's the big deal if they flame up though? Thanks, Pinny

    Food Saver bag failure

    The only time I have had issues with bag failure is when my original seal wasn't flat on the heat strip. I don't use the 11" rolls - they are too big for my FS. I like the 8" rolls the best, as they don't overflow the plastic "tub."

    Ok, I just purchased an entire set (4 stones, tapes, dvd, ceramic hone, ect.). It was slightly used, (in "like new condition") off Knifeforums.com buy/sell forum, but it was only $150 shipped. Pretty sweet deal, now I just have to wait for it too come. Thanks for helping me buy the right thing...

    I have never once had a piece of electronics fail after a light rain. I've left out a variety of cheap digital thermometers and grill lights. The worst that happened was to a $10 Polder thermometer, where the screen went blank after a heavy snow. Even then, it dried out for a day and worked fine...

    I can't believe a $100 thermometer comes in a .50 cent casing. A high end kitchen thermometer that's totally not waterproof? If you open up the case (which I had to do after a light rain), you'll see that the wire which attaches the probe to the main unit is thin as a hair. And then if you want...

    Thanks Kevin. One more question- do I have to get the Global brand diamond/ceramic steel, or can I just use the Smith's brand diamond steel I already own. The steel was only 15 bucks at walmart, but it feels like a high quality item to me.
