    Standing Rib Roast Debriefing

Well, I smoked a standing rib roast the other day using the rotisserie. In addition, I made au jus and Yorkshire pudding. For a first time, things went okay, but there's plenty of room for improvement. I used Minion's recipe for the roast. We found it flavorful. I did note that after...

    Cover for Pre-2005 Performer

I should have a cover for the 2002 SS Performer I picked up. I saw one at Lowe's today and wondered whether it would fit mine. It seems the SS performers were longer than the current ones. Looking at Weber's site, it states the cover is for Performers from 2005 on. So, what do folks use for...

    Standing Rib Roast

I would make a good stay-at-home dad. I am off the rest of the week and have been cleaning, laundry, etc. I even managed to get myself over to the butcher today. It's going to be nice this week and I might as well have dinner on the table when my wife arrives home. I came home with a 6.5#...

    ET-73 on/off switch broken

I had that happen too about six months after I purchased it. After another six months I e-mailed maverick and explained the issue. They sent a new one free of charge.

    Orange Marmalade Sriracha Wings

With the Eagles dissecting the Giants, there was time to get a batch of wings going. It's been drizzling all day, but the result brightened the day. That and the Eagles! I hope this is a precursor to tonight's other NY-Philly match up. Once again Larry, thank you. These things are awesome!

    Weber Rotisserie Question

I pulled the trigger on a Weber rotisserie. E-Z Que has not had the 8" baskets for nearly a year, did not ever respond to e-mail, and stopped answering their phones. Oh well . . . Anyhow, in with the rotisserie was this package of screws. The documentation does not mention these, and I do...

    Beef Cuts Help

I've read many folks smoking chuck roasts. I haven't done so and thought I might give that a whirl this weekend. Also, I've have noticed some people grinding their own beef for burgers. I pulled out my grinder for my Kitchen Aid (hadn't been used in 15 years) and found a piece missing. KA...

    Orange Marmalade Sriracha Wings

I just polished off another batch of these for the start of the Eagles game. These are addicting. My belly thanks you.

    Orange Marmalade Sriracha Wings

Wow! Chicken candy at its finest. I made this for the first time today. I very much enjoyed the flavor. The sriracha has a nice little kick to balance all that sweet. I truly wish I had the video rolling when my wife took a bite. Immediately following that first bite, she ran around...

    Chuckies

Did you pull those or slice them? I am gearing up to smoke some chuckies (never have previously) and am trying to determine how folks prepare them.

    Late Sunday Evening Dinner

Beans were nothing special this evening . . . just some Bush's with some Sweet Ray's, mustard, a pinch of brown sugar, and some Worcestershire sauce. Also, the smoked trimmings of the spares. The fuel was a brand new bag of RO I picked up this afternoon. As a matter of fact, I have never had...

    Late Sunday Evening Dinner

We purchased some spares to smoke this afternoon. We went out for a bit and ended up being out far longer than anticipated. Knowing tomorrow would not produce enough time, I put them on for a late dinner. I followed lesson four of Wiviott's tutorial (although, really, this is pretty much how...

    Hey Jersey/Eastern Penn. guys!

Royal Oak is around here. It is hit or miss with the quality. The last three bags I purchased were quite disappointing as it was all small pieces. Other times I have been very pleased. Pathmark is the local store with RO. Other than that, it's Coboy or briquettes around here I have found.

Whole brisket and tri-tip's in NJ

On 22 August I tried purchasing tri-tips at Wegman's and Trader Joes in Cherry Hill and Marlton. It didn't go well.

    Holding butts

It must be something in the air this weekend. I had two butts come off much earlier than I expected, which kept me up most of the night. I pulled 14 pounds at 5:00. At least my wife woke up to a clean kitchen.

    My First Smoke...Success! w/pics

Nice job. The ribs look tasty. Don't let them pick on your white gloves, I have a pair too. It is summer after all. After Labor Day you need to move to the off white, however.

    Baby Backs with Sugarless Rub

I've mentioned previously that I am going through Wiviott's 5 Easy Dinners course. Today I did lesson three. My wife fetched the cryopak of baby backs. This was to make up for the last time when she came home with spares. When I opened them I was surprised by the size of them. There was...
