    I haven't used frozen burgers in some time. Making one's own patties is easy. Ensure they are uniformed thickness. I place a pat of butter in the middle. Season them heavily. Four minutes per side over direct heat (I am not against using the charcoal bins). Yum!

    Where to start with mods?

    A good mod, imo, is the installation of eyelets in the body of the WSM. This allows one to thread probes in at grate level and into the meat. I use Maverick ET-73 thermometers, but there are others to select.

    BTW, did anyone else notice that the photograph in the e-mail was for the ribeye with chili sauce? That's an excellent dish too, but looks different than the garlic. Additionally, the Weber Nation video did not include the red pepper flakes.

    Recently I saw a photograph somewhere of a Performer with the lid to the charcoal bin up. It dawned on me that my used Performer does not do that. Looking at the lid, I see the rod is bent. I suspect that is the reason why. Here is video of the lid. Will replacing the rod fix this...
