    Thanks for the feedback guys, can't wait to do another. With the lessons learned, I think the next one should be great! No mustard, and wait to mop until bark is "firm" I may start the grill a little sooner and get it fully up to temp before putting the brisket on as well.

    Decade long KBB users here recently converted. Not to Competition, but to Stubbs as someone above mentioned. Wally has it for $7.87 a 15/lb bag here. Stubbs burns hotter than KBB, and way less ash. I think I like the flavor better too, but haven't used it long enough, only 2 bags so far.

    Why you light it like you do?

    Having recently gotten a 26'er kettle I've used option B) Light about 15 briquets in the chimney and pour on unlit coals. It's work great so far with a butt and ribs.

    Foiling question..............don't shoot me!

    I do not foil based on color. I foil based on time (target/eating time) and temp. Essentially I use it to speed up a cook, if needed. I don't always foil.
