    Probe holder?

If I don't have a potato handy, I poke the probe through a wad of foil. Works well enough to keep it off the grate.

    Cajun Bandit (Weber Grill Mod)

This part was due to it being out of fuel, not clogged at the bottom. Until all the charcoal burned up, it held temperature pretty well with adjustments every 2-4 hours, and I'd sweep some ash with the one touch every time I adjusted. I've never used a WSM, but I was impressed with how steady...

Just bought a Smokey Joe Silver

Since you have a performer already, and probably don't want to spend a bunch of money... Why not punch/drill a lot of holes (biggish holes) in a coffee can, put charcoal in the can, then set it over the gas flame on your performer?

    Cajun Bandit (Weber Grill Mod)

I just noticed a feature of the CB. I was browsing the charcoal grate mods page, and I noticed that a couple of them are supposed to let you shake the charcoal grate/chamber to let you separate the ash. The charcoal ring on my bandit has tabs stamped and formed into the bottom. You put the...

    Smoking With Smokey Joe...

I love it. My challenge to you is to rig up an ash sweeper that you can use without opening the lid.

Smokey Joe is an excellent grill

I had the SJG out again last night, and got my best results yet. Used all the half-burned charcoal I had left in Joe, plus everything that was in the charcoal baskets from the Performer. Worked out to almost a full chimney of partially burned charcoal. Got it lit in the chimney, then banked...

    Outdoor Kitchen

Gary Bramley has a great setup for his kettle and WSM. It may not have all the bells and whistles you're looking for, but they're the cleanest built-in Webers I've seen, maybe ever. Pics linked in this thread: http://tvwbb.infopop.cc/eve/fo...550023554#9550023554

    Cajun Bandit (Weber Grill Mod)

That's a 24" hot water heater drip pan that I picked up at Home Depot for $18.95 plus tax. It fits the Bandit like they were made for each other.

Finally got my Lime Green Performer

I have a bid in on ebay for "elegant fare from the weber kettle" as seen in your last picture.

    Foodsaver V3840 opinions?

I've been in the market for a foodsaver for a while, and i recently stumbled across a V3840 on craigslist. Is this a good model? It seems to have most of the features people talk about: two vacuum levels, two sealing modes, instant seal... Anyone have one who can recommend for or against...

    Gold or Silver

I also got my SJG from craigslist, new in box, $10. I had originally planned to mod it sort of severely, then use it for a firebox on my ECB. TVWBB readers convinced me not to cut up a limited edition color, so now it's my travel grill. I say you do the direct comparison, while I shop for a...

    Gold or Silver

Yeah, I didn't realize that I pulled the coals too early on that first cook until I saw a couple of the pics I took with flash. In the pitch dark out there, they looked like they were glowing really well. I've tried more coals since then... about 3/4 chimney. That was better, but no matter...

    Gold or Silver

After the first time I threw it in the trunk of my car full of ash and half-burned charcoal, I knew I wouldn't mod the bottom. The convenience factor is huge. However, even banking the coals between the vents, etc I have trouble getting a satisfactory fire. I still might pick up a silver for...

    Gold or Silver

The gold does not get good airflow to the charcoal as a rule. There are a couple of threads floating around about firebuilding methods to help overcome the airflow issue. This one even has a diagram: http://tvwbb.infopop.cc/eve/fo...40039023/m/112108341

    Gold or Silver

I'm torn. I have a gold, and I'm not a fan of the side vents. But it is totally mess free when I throw it in the trunk of my car.

    Cajun Bandit (Weber Grill Mod)

Have a whole pork picnic in the Silver Bandit right now. Put the meat in at 6:30 am, up to temperature and last vent adjustment at 6:50 am, just came downstairs to check (9:50 am), and the grate temp is holding steady at 246 degrees. I may have found a good temporary thermo solution. I picked...

Fresh only, or ok to Freeze?

George- If your steaks were dry, tough, or grayish that's classic freezer burn. Most grocery stores wrap beef on a styrofoam tray, and the plastic wrap isn't airtight. Meat frozen that way will slowly dehydrate in the freezer... freezer burn. If there are ice crystals forming on the meat...

    Smoke EZ

I really need to learn how to weld. I can see cutting up a 22.5" cooking grate and a Smokey joe cooking grate, then welding them together into something like that.
