    favorite sauces for Butt?

    I just tried the "Florida Citrus Sauce" ( i think that was the name)from "Smoke and Spice". I used it with the Jerk Butt from the same book. It was very good, not something I'd use all the time, but a nice change. I mixed some in with some chipotle mustard I had and it was great too. Kev

    Thanks for the feedback. The "cherry Rib Mop" is exctly what i wanted to make. (i didn't notice he "heat" note at the bottom, though) So, I would assume i should look for some sort of Chile based paste. What could I substitute if I can't find it? Could I combine chile powder and something else...

    I recently got the "ribstars" cookbook and a few recipes call for Asian Paste. I've never heard of it and didn't find it in the local grocery. Do you buy it made? or do you mix it up yourself? Any help would be appreciated. Thanks Kev

    I just saw something on TV the other day (don't remember where) they said Kosher salt sprinkled on the board and rub with a lemon half. Haven't tried it, but it sounds good to me. Kev

    would you reccomend a lighter fruit wood for this, or would go with something a little more intense? I like apple for poultry, but this being pastrami it may benefit something stonger. Kev

    Jim, thanks! I tried the sauce this weekend. It was great. My wife really loved it too. I didn't particulaly care for the ribs with just salt and pepper though. But you never know untill you try. I used a couple chunks of pecan and one hickory. Worked out great. Kev

    I just bought a house with a septic system and I don't want to dump the water from the pan down the drain. I'm told the fat may clog the system. Burying it in the yard isn't really an option either, animals and the smell, any suggestions? Thanks Kev
