Does anyone find any great benefit to seasoning butts the the night before coooking?

Wow its been a couple of years since I cooked Butts and I was lucky to find Pork Butts for .99c/lb againusing a butt rub for Jane recipe. I am doing 8 out on the smoker sometime this week. Any opinions on if flavor is in any way enhanced by applying your rub 8,16 or 24 hours earlier? Thanks

I may have ruined my ribs before I cooked them! Thoughts?

I concur with tony that as long as temps were save you can re-season if some of the seasoning came off. if you re-season maybe do it with a version of your rub that is salt free as if they "brined" you could over salt with the reapplication.

Is the Electronic Touch-N-Go™ gas ignition system on worthwhile or not worth it?

the stainless one requires welding to keep working. the tabs that hold the grill grate and the charcoal grate in place have rusted through completely on one and two others will require significant welding. My brother in law is willing to do it but if I can find one cheap and update I might...

    Peruvian Garlic-Lime Chicken- Cooks illustrated

Did anyone else make the Peruvian Garlic-Lime Chicken Recipe in the March-April 2011 issue? They modified what was traditionally a rotisserie recipe to be coked indoor in an oven on a vertical poultry roaster (a glorified beer can chicken holder). This could easily be used out on a grill but...

My Best Turkey yet!! Salting beats Brining in my book!!

This is largely a copy of my post in Turkey Talk but its more of a "recipe" so I thought I should post it here. It's long but through and has several key takeaways. 1) Get the best quality unbrined bird you can for the best results and taste- it makes a difference. 2) Salting poultry, when...

I've had the same issue to a lesser degree. I'd love to switch charcoal but I'm cheap and sitting on a palate of Kingsford and still have some original charcoal company charcoal. I have pondered if there is a decent soloution to htis as the fan is vented down to where the ash collects. Since...
