anyone have any experience with Smithfield Prime all natural premium fresh pork?

When I went there this am they sold me "Prarie fresh" pork ( a seaboard product). I didn't realize it until I had opened 2 so I took the rest back and swapped it out. I am keeping track of which 2 are Prarie fresh and will see if a difference can be observed. So the 10 racks are " getting...

How far in advance do you rub your butts before smoking?

So I got lucky this week and really didn't have the time to smoke butts but was at the store ( piggly wiggly in the Milwaukee area ) and they had butts for .99/ lb. I haven't made butts in almost a year and haven't seen a price like that in a few years. These were huge, a pair of them were...

It's 6:30 am the party's at 3:00 but the meat is at 185. Can I hold that long?

Is there any drawback to using the oven at 165 for part of the holding time? For the time being I put them in the oven and was thinking of transferring them to a preheated cheap igloo plastic cooler in a couple of hours. My consideration is if they have been in the oven for a couple of hours...

It's 6:30 am the party's at 3:00 but the meat is at 185. Can I hold that long?

Cooking four shoulders on the 22.5 for a party at 3:00 today. Its 6:30 am now. The meat probe reads 185 on my cyber-q. The pit temp is at 239 and without adding charcoal I figure I have 3 hours fuel left. The 4 butts went on at 7 last night. What would my best strategy be to finish the...

First cook of 8 Butts in the 22.5

Well it was a long night and I finished pulling around 2 am but I have allot of pulled pork here now!!! 16 gallon zip lock bags. No help at midnight from the neighbors so I had to do it all solo. To ensure I safely chilled it as I pulled a butt I then sandwiched each between a layer of ice in...

Help!! need input and others experiences to finish 60 lb butt cook

looks like its going to be a late night!!! I'm worried that leaving them in the oven til morning could let temps drop into the danger zone. my next thought is how to safely chill all this meat after cooking it. I cleaned out a cooler and picked up 30 lb of Ice so after I pull each shoulder...

Help!! need input and others experiences to finish 60 lb butt cook

Only using the 22.5 and may break out the foil shortly and finish. I think part of the problem is 8 large butts was too much. Coals arent snuffing out I havent had an issue that required me to restart the cooker just refuel. My better choice might have been to use both smokers and put two...

Help!! need input and others experiences to finish 60 lb butt cook

Starting this as a new thread as I can't figure out how to change the header on the one I started for the cook. My first venture into cooking 8 butts on my WSM is quickly turning into a debacle. After 19 hours the temps of the Butts are in the 170's and hey are nowhere near being done. I...

First cook of 8 Butts in the 22.5

Robert those weights are for the packages of 2 butts... the average weight of the butts after trimming is 7.3 lbs Internals are only up to 145-155 on the top level. I set the smoker for 225 for the overnight cook (probably should have gone higher) set for 235 this morning and bumped it up to...

First cook of 8 Butts in the 22.5

I haven't cooked butts in 3 years and you would think I might have started back with a smaller quantity. My weakness is a deal! Found them for $.99c/lb at our Piggly Wiggly. They were super fresh with a pack date of 9/17 and looked good. I had the time this week so I thought I'd go for the...
