    I've wrapped sausage balls in bacon and smoked with great success. Like somebody already said, anything is good wrapped in bacon!

    I found I didn't like the smell from KB ... more coal smell than wood which seemed to transfer to the food when using the minion method. I now stick with natural hardwood briquettes and am experimenting with some sugar maple lump now.

    Jerry, Just did a 3lb pork loin, brined for 6 hours and cooked on the WSM at 260 to 280 degrees for 2-2.5 hours to an internal temp of 145. While resting it gained another 5 degrees. Have fun!
