For the Almonds, I started with an unsalted pack from Costco - didn't really pay a whole lot of attention to them. They were tossed with about a 1/4C of melted butter and a couple of tablespoons of BBQ rub. Smoked about an hour or so somewhere in the 250 degree range (didn't pay much attention...
Much like the other posts here, I foil the water pan and clay saucer for easy cleanup. Once the cook is finished, I can dump the drippings out of the clay saucer into our municipal composter, peel off the foil and be ready for next time.
This one was a simple American Pale Ale, mildly hopped with Cascade. I needed something nice and light to finish off the summer. I normally have a variety of English Ordinary or Special Bitters on hand. Next up is an Oatmeal Stout to prep for the cooler nights of the fall.

Chicken Wings
My significant other went away for a weekend, so that meant chicken wings for Alex and I. Nothing special - just...
I could place the probe under the grate, but want to avoid meat drippings. When through the top it hangs withing a centimetre each time - I use a wooden clothes pin to clip it to the vent - my cable is nice and clean where teh clothes pin clips on making it repeatable.
Maybe it's time to...
Since I don't always have room on my grate for the grate clip, I like to hang it from the lid vent for consistency.
And, when I take off the lid, I just pop the probe out of the Maverick, leaving it in place in the lid. No fuss. Works for me.
