    The Orchardman is your friend

Why take the chance with trees treated with pesticides? They may say the spray is not harmful, but they also said cigarette smoking was not harmful.

What meat would be good for my first smoke on the WSM?

I agree with Jeff. Pork butt is the way to go. First time using the WSM you may have trouble controlling temps. Butts are very forgiving. After my first cook I was able to control temps and moved on to ribs and turkey. Good luck.

    Charcoal??

I have used them both. Both perform well. I buy whichever is cheaper. Royal Oak is usually cheaper where I live. I find that you will get a longer burn time from charcoal compared to the lump I use. Therefore, I use charcoal for over night cooks. For shorter cooks, I use Hump lump.

    Hot Wings/Buffalo Wings

I am with you Bill. Buffalo Wings must be fried, at least initially. Wings "from the pit" are my favorite. Also, wings are dipped in bleu cheese dressing. I have been to other parts of the country where they are served with ranch dressing . Also if anyone is in the WNY area, you should stop by...

    FYI - East Coast Tri-Tip's!

Kevin, What is the difference between the sirloin roasts that you mentioned? How will I be able to tell whether I am actually getting a tri-tip as opposed to say a sirloin tip? Being a relative newbie, I took my butcher at his word. He seemed quite confident in his answer, but I now have my...

    The Orchardman is your friend

I would be a little concerned that the trees may have been sprayed with pesticides. Being a telephone repairman, I always keep an eye out for fruit trees when working in someones backyard. With permission, I will usually snip a branch or two. I always have a supply of apple, cherry, and pear...

    FYI - East Coast Tri-Tip's!

I asked my local butcher why they do not sell tri tip on the east coast and he chuckled at the question. Butchering a cow on the east coast yields the same cuts of meat as a cow on the west coast is what he told me. Tri-tip is called sirloin roast in WNY.

Thanks Dave. I will check it out. I think I paid $10.50 for the lump at Adventures In Heat on Main St.

I recently purchased my first bag of hump lump. I found it to be a very good product. It is difficult to find good lump in the Buffalo area. I have used Cowboy before and I was not crazy about it.

Would You Buy a BGE if..?

I too would buy a bge at this price without hesitation. I had it narrowed down to the bge and the wsm before finally purchasing the wsm. Price was a huge factor when deciding which to purchase. However, I do not feel that I settled for the wsm as I am quite pleased with it.

    Online sources for fresh spices?

I am looking to purchase fresh spices on-line and am seeking advice as to the best site. I have always used spices bought at the grocery store with good results. However, I purchased a rib rub at a local bbq shop and was blown away by the taste. This rub made the best ribs I have ever cooked...

I think I would build my next smoker also.

That is what I am hoping. I am also hoping to be eating by kickoff of the Bills-Pats game. And while I am hoping, I hope the Bills crush the Pats in Boston. It never hurts to hope...
