    Gary, Understand, but you will be very happy when you smoke a whole packer or 3 or more racks of ribs. They are much easier on a 22 since the 18's grates make it much harder to deal with due to the smaller size. Kg

    Dave: I agree on keeping the temp low for butts. What I meant was the higher temperature the meat is exposed to when it is outside of the water pan edge due to the almost direct heat from the coals. If you do have to put meat in this outside edge, then putting the fat cap down on the grate...
