Two Brisket points become Pastrami on the 14.5

These look great and I want to try these if I can find a walmart with them. What is a good temp range that you cook these to? Thanks, Kg

    Butcher Injection?????

I am not expert by any means (I don't do comps) but I got some great guidance from a comp team some time ago to do just this....cut the beef injection by half. He also said to use beef broth for the liquid. For pork, I can't remember if the ratio was cut back or not (I haven't injected in some...

    Stubbs/Backyard Grill/B&B go head to head...sort of.

Well it depends on how you loaded the charcoal in the baskets. If you loaded them in by weight, then the size doesn't matter for the ash produced. But if you loaded them by quantity so each has equal amount of briquettes, then the larger ones would be expected to produce more ash. But I...

    Stubbs/Backyard Grill/B&B go head to head...sort of.

You mentioned that the BG are larger, so it would seem they would have more ash then as well. No? Thanks Dave for the comparison. Kg

HH Chicken - Getting the WSM to Temp

Ah yes, the dreaded rounded opening. I have this on my 22 and hate the fact I can't flip the door. Probably the easiest thing is to offset your lid just a little bit so you don't let too much smoke out, but you do increase your airflow some. For my 22, I am either going to square up the...

    Slot for probes

Only thing I regret is not thinking of the slot long ago when I put the eyelets in my WSM 18.

lighting coal with weed burning torch

I use a much smaller torch since I don't want to light too many too fast. What I do is use the torch on 3 separate spots in the ring about evenly dispersed in a triangle so the whole ring burns evenly for the most part. I hold the torch in each spot about 10-15 seconds....just enough to get...

I can't find full packet brisket in Montgomery County, MD. Only flats...

Hey Jeff, It may not be the closest place to you, but Treuth's by Ellicott City is a real beef distributor and has the freshest beef you will probably find. I heard they may be closing their retail store, but looks like their website still has it listed. I would give them a call to make sure...

A tip for cleaning probe tips.

You beat me to it James. The hot/boiling water trick is great. I just put a cup of water in the microwave for a min or 2 and then stick the tip of the probe in it for about 30 seconds. It usually wipes clean. If not, then put it in for another 30 seconds. I am sure if you combine this hot...

Anyone attempt Kettle Work Table attached to WSM?

I am one of the ones who posted a thread on the table. The link above opened for me. I still use the table just about every cook. It works well on my 18 WSM. I haven't found a solution for my 22 WSM yet, but I just got that. Let me know if you have any questions on the side table. Kg

    WSM Blankets...

I just used my welding blanket (6x8) for first time over holidays and it worked really well....better than I thought. it was really windy and while I am not sure it did much for keeping the heat in, it did work very well for a wind break. I use a little weber side table with my 18" WSM and...

    Cutting Notch in 18.5 WSM

Bob, I have the lamp rod grommets (large lamp rod even) and fitting the wires through is not the issue with me. The issue is routing the wire up through the grate can be a pain, but more of an issue is when you want to get to the meat on bottom grate, the wire through the top grate is always...

    Cutting Notch in 18.5 WSM

I have been thinking of doing this as well. I have the grommets and frankly they are a hassle IMO with how you have to run the wires and feeding them through the grates and stuff. Let me know how it works out. I am getting ready to do this on my 18 and 22 probably. Keith

In the market for a charcoal grill....

One note is that my performer came with 2 charcoal baskets so I use them to dump my charcoal in, and position them over the propane assist burner. I have a chimney but like the baskets better. Kg
