Pork Ribs bone side up or down?

That's what is I do as well. I read something somewhere that you should take them off, wrap them in foil, cook in foil, unwrap, cook some more, wrap in foil again and let sit. Or something along those lines. I have a few more months to get my ribs down just right for my cookouts this...

    Holding Butts in Cooler

You can also pre-heat your cooler. First bring the cooler in to get it at room temperature - Then use hot hot water and let it sit in there a while, dumb it, pre-heat your towels in the microwave (if you have empty spray bottle, give them a spritz) Dump water out of cooler, quickly put in...

55 gallon barrel wind screen question

I'm far from a pro of any sort with this thing or subject - but I would think that having zero air flow would be the problem. Perhaps having a small gap at the bottom of the wind screen would allow appropriate air flow? Just a thought?!

    Grape Vines For Smoke Wood?

I read on a website that you can use Grape Vine as smoke wood. I have a forest that has tons of the large 1.5 - 2" diameter "grape vine" that we use to swing on when we were kids. Hangs from way up on the tree's. We always called it grape vine, but I never saw any grapes. Seems silly I know...

55 gallon barrel wind screen question

I've been trying to find a solution for a windscreen. I first tried making a box with a buddy who said he was a carpenter. $118 later and I have one charlie brown looking wind screen. Scrapped that one. Been considering doing the dog fence panel idea that one member did. About the same in...

18" WSM Stainless Steel Door Replacement

Does anyone know what to use to get the door clean? While the looked great, I didn't notice any improvement with it. Thus, it was a merely aesthetics purchase. I have stains that run down from the handle and on the sides that I cannot get clean! I've used Greased Lightening, Dawn Soap &...

Ok, bought foodsaver, now have a quick question...

I bought a bunch of small aluminum tins and "pre-freeze" my pulled pork with any left over rub (just make it into a sop basically so I can pour it in). It comes right out of the tin in a nice shape, then I vac pack that. Great presentation, great for stacking in the freezer as well. will post...

Thermapen over constant in meat probe?

First thanks to everyone, amazing folks and amazing advice. I've had my WSM since Sept. 4th and pretty much have used it every weekend. Not many parts of the Pig left for me to try! I was looking through the site, and I noticed that a lot of people have the Thermapen in their tool boxes...

    ZIPPO OUL?

I've had one for over a year, haven't had a problem with it. I would order extra batteries for it though, while I love the LED light, its easy to forget to turn off. One thing I don't like about it, can be hard to fit in tight places. At Sam's Club today I purchased a 3 pack of flexible...

    Thermometer transmitter compartment

I don't know if anyone is watching this thread anymore, but what I've done is add some magnets to the back of my thermometer transmitter. Sticks to the side of the smoker great, and not permanent.
