    Harry Soo can't be right....

    As I have said before, I bury my wood chunks (under 1 layer of briquettes) on the outside and pour lit coals in the middle. I get thin blue the whole cook and great taste. Lots of ways to do it. Can't argue with Chris' method; after all, he IS the WSM guru.

    Lots of advice here on the WSM, try The Virtual Weber Bullet tab at the top of the page. As for how much pork, I figure 2/3 pound uncooked per person. If you have 30 people, buy 20 pounds. Good luck!

    WSM or Cajun Bandit Conversion Kit

    The Smoke EZ uses a variation of the snake method; I get about 10-12 hours before having to add briquettes. I get 14-16 hours with my WSM; never had to add fuel. Times are based on cooking 250-275. Adding fuel to the Smoke EZ is easy since you just extend the snake. Not sure about the CB...

    Fire chokes on Performer

    If the top vents and bottom vents are completely open, I don't know how it will choke the fire. I've had lots of kettles including a Master Touch and a Performer and have never had that situation. Maybe something in the ash catcher is blocking the bottom vents? It's a mystery to me.

    I'm also from Georgia (Marietta). Your location is a little vague; I'm guessing you mean Blairsville or somewhere like that. Used stuff is usually found in the "Buy, Sell, Trade Grills & Gear" discussion. Also check craigslist. All of my Webers except my gasser were "rehomed". Welcome!

    Grill Cover Recommendations

    I got some Texas Grill Covers off Amazon for my Genesis and Performer a couple of years ago. They are still in great shape. Have a Classic Accessories cover for my WSM - it seems to be lasting also.

    A performer just kinda happened.

    Yeah, my neighbor picked up a sweet deal on a grill and offered his 26" kettle to me for $75 - then I woke up. I don't have neighbors like you!

    Looking for advice on minimalist set of Weber (or other) grills.

    Performer, Jumbo Joe, Genesis Silver C. I used to use a Smokey Joe for my portable, but the JJ can cook for a whole group of us. I never use my gasser (it's for the wife).
