    Oh My Diet!

I really feel for you. I'm dieting as well. I'm 5'5" and at my heaviest I was right about 200 pounds. Not too incredibly bad but I've developed sleep apnea as a result (currently uncontrolled because I absolutely can not sleep with a CPAP, appointment with an ENT in two weeks to see if...

    Black Maple

Ok, I'll give it a try after it's seasoned for a while.

    Yet another pork butt question

Same here. Last time I used iced tea (we didn't have apple juice in the house and I happened to be drinking iced tea at the time). It seems to have worked well. Next time I might try "gunpowder" green tea since the tea itself has a smoky flavor to it and it's one of my standard drinking teas...

    Smoked Meatballs?

I haven't tried smoking meatballs but the wife has an amazing recipe that she makes in a crockpot. All I know is store-bought BBQ sauce and grape jelly.

    Black Maple

I mentioned in another thread that a friend of mine has maple trees on his property and had asked if he had any branches and such lying around. His house flooded a couple of weeks back so he hasn't been home while repairs are done. He stopped by tonight with a couple of logs. He went by his...

My father in law made my day....

I'm assuming it's a typo. A quick google search brought me right back here. http://www.virtualweberbullet.com/pork2.html

    Smokenator

It looks interesting to me since right now I'm using my kettle for smoking (she who must be obeyed says we can't afford a WSM at this time). I do something similar without technology, basically pile my coals on one side, put a water pan over it, and cook on the other side. My only question is...

You all were too hard on the charbroil

Not *all* of us were too hard on them. Everything I posted was the stone-cold truth. I wish I had pictures of all the paint from the inside of the thing laying in the bottom in big strips. Congrats on getting a good one.

My father in law made my day....

Is this something we all aspire to? My FIL was known as the brisket king in the family and made several a year. He actually gave me a lesson in making brisket once but wouldn't you know it, I lost my notes when we moved. Sadly he passed away about a year and a half ago. Last winter I...

    Wild Game Cookbook, need recommendation

How about Ted Nugent's (Brother Ted) "Kill it and grill it"? http://search.barnesandnoble.com/booksearch/isbnInquiry...sbn=0895261642&itm=1

    Pig wings

Now that sounds like a heck of an idea. The Mrs agrees.

    Thanks to everyone

Echo, echo. Where else can you get questions answered *while* you're cooking, even on a Sunday?

    Baking Pans

If you're not going to use it for anything else I don't see why not. "She Who Must Be Obeyed" wasn't too thrilled that I used one of her loaf pans for my water pan last weekend when I smoked a pork butt. On the plus side I now have a permanent water pan.

    Seasoning wood

Going through the Mesquite vs Hickory thread the subject of using maple came up. That really got my attention. I've contacted a friend of mine who has maple trees on his property (bonus, so does his brother) so I might have a line on some maple. Definate noobie question. If I can get my...

    Boston Butt Fantastic!

Hmmmm, maple... Interesting... I've got a friend with maple trees on his property (which he's tapped for syrup the last couple of years) wonder if he'd notice if I took a few chunks out of one of his trees. > <BLOCKQUOTE class="ip-ubbcode-quote"><div...

    Warming Rack Usage

My rack is sitting in the under-grill storage, never used. I forgot about the swinging rack until I read the above post. I had to go look at my grill, "oh yeah, that swinging rack.

    Smoking with Mequite vs. Hickory?

As a newbie, so far I've only used mesquite because, like you said, it's available at home depot (and pretty much everywhere else). I smoked a pork butt with it this weekend (my first butt, yay) and I think that smoke-wise it turned out great. I had a little of the left-overs for lunch and the...

    Bison brisket

No answer here but rather then starting a new thread I've got a similar question. First, bison brisket, mmmmmmm, sounds good. Now for my question, my wife picked up a veal brisket at the butcher because between the two of us we make a heck of a beef brisket in the oven (sacrilege I know )...

    1st smoke on the kettle

The butt turned out pretty good. Thanks to K and Rich for their suggestions. I did pull it at about 190 degrees. The meat was falling off the bone. It had about a half-inch smoke ring. The thickness and redness of the smoke-ring suprised me, at first glance I thought that it wasn't...

    1st smoke on the kettle

Ah, I see. I went back to check Ray Lampe's book where I got the 170 from orginally. That's for *sliced* butt. Right now it's at about 130 at about the 2:45 time mark.
