    Binchotan Japanese Charcoal

I too am interested on how this turns out. Maybe you could pick up a bag of Ozark Oak for a comparison. Cheapest in stock I could find right now is $16 for a 10lb bag including shipping @ http://www.firecraft.com/product/ozark-oak-lump-charcoal/charcoal-wood At $1.60 a lb., may be worth a shot...

    My version of a wsm-table

None that I can think of. He's already got drainage holes in the leg cups where any water would collect. He probably built it before knowing it is not needed.

    Perfect Smoky Rib Eyes

GrillGrates are one of the best purchases I've made for superb searing. The sear marks in the OP pic were made with them. Nope...for those reasons only. If I wasn't gonna put some smoke on them, I'd let them sit out and come up in temp for about an hour. ;)

    Tri-Tip experiment

Well, I was shooting for more medium, because that's the way she likes it (actually med well). Me n' da kids will eat it still mooing. ;) I ended up just taking her slices and searing them separately.

    Tri-Tip experiment

That looks awesome Tony!! Great job! :D Wonder why mine was almost underdone and I took it to 139* before the sear? http://tvwbb.com/showthread.php?43122-Quickie-Tuesday-Night-Tri-Tip Maybe the injection helped out. I'll have to give that a "shot" :p.

    Top Round (London Broil) Question

Thanks for the update. I have been contemplating cooking some LB, but I was under the impression that any temp above MR would be tough. I suppose LNS should tenderize it some.

Komodo Kamado Hi Chad. I was recently wondering the same thing, so I sent off an email. 1st reply: 2nd reply dated 05/17/2013: Hope this helps. Keep us posted if you pick some up. Obviously I'm interested too.

    Porterhouse Steaks

See this: http://tvwbb.com/showthread.php?42327-Perfect-Smoky-Rib-Eyes Can be done on Porterhouses the same or maybe better as there's more surface area. If you want to do the whole cook on the WSM, make sure your fire is hot for the finish and just transfer your top grate right on top of the...

Amazon selling Brinkman pan with wrong part number

That WAS the place to get them (and still is if you have one near you), last I checked they quit selling the charcoal pans online. Then they screwed up. Return / exchange it. I ordered (and am using) the charcoal pan from that link, so it should be the correct one. Actually, it helps with...
