    Looks like the you got the 18.5. You're going to have to bend the outer "legs" of that rib / roast rack in slightly to fit in the cooker. Try putting it in and you'll see what I mean. I wish someone had told me that before I loaded mine up with 4 racks only to find out it wouldn't fit. ;)...

    I put my gasket on the inside of the CB door and did not gasket the where the main body meets the charcoal bowl. Air tight when shut down.

    The instructions say to apply the gasket to the smoker body around the door cutout, but I did the inside of the CB door. Works great.

    19 hrs for 60 lbs. is really not that bad. I had one 8 pounder that took 21 hrs. That is one nice load of great lookin pork. Very good job! :)

    Oh, I exclusively use the brinkmann pan. Actually have another as a backup for the exact reasons you stated. My stock pan has never seen action.

    For the 18.5 it's the 14". I have one but have yet to use it. I spent a year or so fighting temps with a modified ECB with the water pan filled with construction sand and foiled over. Self inflicted torture, yes, but I learned a ton (especially about fire control), so it was worth it IMO. Got...

    It doesn't matter what I'm cooking or how long I anticipate the cook to be, I always use a base of unlit...most of which is left over from previous cooks. I'll vary the amount of lit depending on what temps I'm looking for. I don't see it as a waste of fuel, because once I shut all vents down...
