when grilling, i normally build a fire to the temp range and heat zone that i want both vents usually stay wide open

i think the propane assist is faster than a chimney with newspaper or paper towel with oil it's certainly easier, cleaner, and more effective. i go through about one canister every month, but i grill a lot (and sometimes leave the assist on longer than 5 minutes)

an acidic marinade WILL turn your food into mush. vinegar is an acid. marinading in it for too long will make your food mushy. The 'how long' part varies depending on the food and on the marinade.
