I normally set my Performer with the top vent full open and regulate with the bottom vent. I learned this way from a previous smoker pit. the reasoning is that throttling the top vent
can cause stale smoke or recirculating internally.
What is your method of controlling temperature and why? Does it matter top or bottom?

On my OTS, I typically only control the temp by the amount of charcoal when all is lit. If doing the minion, I will control by the bottom and then that is usually fully closed.

On the WSM, bottom vents only. But I have shut the top down to half for short periods of time to lower with no ill effects.
