    I have a hand hammered, northern, carbon steel wok that we use over charcoal. Works great. Check out your local international market if you have one. I got mine here in Indy for under $20.

    Of the three you listed, I'd go with the JJ. You can set it up for indirect cooking without much effort.     I'd definitely check it before heading out at 6am. It might be done, or close to it, by the time you're ready to leave if you put it on at 9pm. So long as the other son or wife can pull it off the smoker and stick it in the cooler while you're gone, you should be good to go. BTW, if you can...

    That looks amazing Tony. I think most of those who say they don't like beef tongue, have never tried beef tongue. It's delicious, especially as tacos de lengua! Looks like you smoked/grilled? the chiles and tomatillos for your salsa verde. I'll bet that's perfect on those tacos...or anything...

    I shop at Costco, Restaurant Depot, and GFS here in Indy. No membership required at GFS, they have good prices and I have found them very willing to help me find the best meat, especially ribs.

    If you have a GFS in your area, check them out. You can get a big box for not a lot of money.

    Did they smell ok when you unwrapped them? I've seen cold foods abandoned by shoppers put back in the cold case.
