Question about "Pork Shoulder Blade Roast"

Just to clarify a little, in my area a blade roast is 1/2 or 1/3 of a pork butt

No more lump charcoal around me?? Now what?

Have you checked hardware stores? For what it's worth, the KJ big block is great stuff. Certainly FAR better than cowboy as well as royal oak.

Recipes - Is there a website or book recommendation?

I have a many of the "better" books including aaron franklin and the weber books. There are plenty of misses as far as recipes go. The meathead / amazingribs recipes are pretty solid although often way over complicated. Even online, I often find stuff that is WAY too salty, or sugary, or...

Yet another camping discussion - Q, go anywhere, SJ / JJ

Once a year we go camping with a bunch of folks from our neighborhood on campsites (park 20 feet away), but the sites are only maybe 30-40 feet apart. IE everything is pretty tucked in together. This means when lighting charcoal it's going to smoke some folks out. Trying to decide whether to buy...

    Weather proof?

I use a sturdy horizontal deck box for charcoal (lump and briquette), plate setter, soapstone, etc. I live in a pretty humid area and it doesn't seem to bother the charcoal that much. There is a little more smoke as it gets going, but nothing significant, and its worth it to free up space elsewhere.

    Gas go anywhere bbq

If she's anything like my mom, a bunch of videos is not going to sway her at all. If I were in your shoes, I would flat out just buy a q120/1200, or 100/1000 and add a tel tru therm. Whatever you do, find one in good shape. Grates with zero rust. Test the therm make sure it's accurate Bring...

WSM > Kamado Joe > Upgrades

I’ve owned 18” & 22” wsm, many kettles, performers and other gassers. Ultimately my patio ended up with a large 18” green egg for small weeknight cooks and 95% of my bbq. 22” wsm for the other 5%. A 26” Weber kettle. And bounce between a restored genesis gasser and q3200. I don’t use the wsm...

Why I'm Done With Reverse Searing

I really think one of the reasons it became popular is due to the kamado grills. You basically have to reverse sear, as a Kamado is single zone cooking and takes forever to drop in temp. Whereas you can get them from 225f to 600f in a few minutes. I do think reverse sear turns out a better...

Cover for q3200 / q320 with tables down?

Thanks, the thing is, I only use it a few times a month and would rather store it tables down. it's around 37" inches. There is a small cover, but looking at reviews from folks who tried it with the Q it is still very loose around the base.

What are your favorite BBQ tools? Best burger flipping spatula?

Edlund heavy duty tongs are a total game changer. I’ve tried every conventional tongs on the market from oxo to custom made. Edlund heavy duty scalloped style are the best. I prefer them over the flat grill edlund tongs. I buy them from a restaurant supply as there are lots of knockoffs...

    Char-Broil Big Easy Oilless Fryer

Alright - chicken was excellent. I would say, for a whole chicken, as far as even cooking and crisp skin it's noticeably better than on a kettle and slightly better than on a kamado in a vertical roaster. I can see how this would turn out a perfect turkey. That said, it wasn't quite as good as a...

    Char-Broil Big Easy Oilless Fryer

Picked it up today. Super interesting device, it's basically a propane powered air-fryer. It's pretty clean but I'm running it on high for a bit before oven cleaning the stainless pot and clearing out the burner tube, pretty sure it has some spiders. Chicken brining in the fridge for the maiden...

Cover for q3200 / q320 with tables down?

The standard weber cover is super loose if the tables are down. Does anyone have a cover model handy that is a nice snug fit when the q3200 has the tables folded?

Re-certify Propane Tank in Atlanta Area?

I bet that this is more likely to work with a 20lb tank in good shape. But the 5lb probably is odd enough to where it will get checked by most. If a 20lb expires I just take it to a propane tank prefill swap, check the tanks for one that has a recent stamp and trade it out.
