Ikea Metal Trash can with Lid - looks perfect for ashes

http://www.ikea.com/us/en/catalog/products/00095055 There is a 4 and 11 gallon version of it - looks like it would work really well for ashes. I saw it at the store last night, but I already have a few trash can solutions so I didn't pick it up... but for someone looking for one - if you have...

Important note: Clean your drip pan before doing high-temp cooks!!!!

My dad just took it down to the local car wash and gave it a thorough cleaning for me (I'm busy working today... shucks ) - But yeah... I guess I will get back into the habbit of dumping it out after every cook. Oh - and the fire extinguishers WASN'T out there with me - once I pulled it a...

    Today’s cook – Prime rib

I did the same thing yesterday - Costco had mine for $4.99 / lb (choice grade) Turned out amazing (even though I did have a little bit of a grease fire threaten to burn down the neighborhood - I posted about that elsewhere)

Important note: Clean your drip pan before doing high-temp cooks!!!!

Ok, I'll be the first to admit that although I used to be pretty good about cleaning my water-pan back when I used to put water in it... since I've switched to using my stoker I've not thought about it much... So... imagine my surprise when I'm using a hair-dryer to heat up my coals for a 350...

Safe cooking temps for a ready-to-cook ham?

Everywhere I have seen has said 325 for an uncooked ham. This would be ok with me normally, but I have a 9.9 lb ham that I really need to take about 5.5 hours to cook, not the 3 hours it would take at 325. I figured I would put it on the smoker, set the stoker up for 260 and then head out, and...

    Gelatin injection

I have injected butts before - using the Chris Lilly recipe in the pork recipes forum. I like the additional flavor it gives the pork. I don't inject for tenderness - that's a given.

    Lump longevity vs Briquettes

Lately, I've started buying some of the 8.8 lb bags of Cowboy brand lump that they sell at Home Depot or Lowes - The bags are roughly the same size in volume as a 20 lb bag of Kingsford - but they only contain 8.8 lbs of product. I haven't measured it much, but it seems that I get about the...

Chris Lilly's Six-time World Championship Pork Shoulder injection and rub

I think it actually comes out a little salty with the default recipe - I've started scaling the salt back a bit. I like this recipe a great deal because it gives the pork a nice flavor and it comes out very moist and can be served without any sauce.

    New WSMs for 2009

Did you get to keep it? You should have brought the door with you and gotten it autographed...

1965 Red Weber Kettle "Ranger"...you gotta see this!

If Weber doesn't have one of those already - they would probably trade you a ton for it.

    New WSMs for 2009

Is the pricing released yet? $399 is way too much in my opinion. $299 - probably the right price point IMO - because it means they can have the 18" at $199 and be good. As nice as it would be to have a big WSM - the fact of the matter is, I wont use it nearly as much as I use my current 18"...

    Combo Thermapen? (IR / Thermapen)

Has anyone used one of these? It's a thermapen, but has an IR sensor on it as well. http://www.thermoworks.com/products/ir/combo_thermapen.html It sells for the same price as their normal "super fast" thermapens, so something's gotta give... I'm assuming that the thermapen part of it isn't...

    Deal or no deal?

Just post to the guy and say "Hey, nice grill - probably worth what you are asking to someone, just not to me. If you haven't sold it in a month or so and want to move it, I'll give you $100 for it. Let me know - hope things work out for you for the best!" That way you get a lowball offer in...

E320 porcelain enameled cast iron grill

The grates on my Genesis 1000 Craigslist find are in less than perfect condition (somewhat rusty, have a rough texture to them, so it's hard to get food to release cleanly) For a set of replacement grates, I was thinking Stainless would be best. They don't make PCI grates for the Genesis...

    Cooking for 60

Before I bought my WSM - I did ribs in my kettles all the time. With a rib rack, you can get at least 3 - possibly 4 racks of ribs. If you throw your kettles into service - you could cook 8 racks on your kettles (no need to roll them) and 8 racks on a WSM (rolled) and have a grand old time...

Indirect techniques for a 3-burner horizontal model (i.e Genesis 1000)

I just picked up a genesis 1000 - with the three horizontal burners and the criss-crossing flavorizer bars. I bought it with the intent to use it for direct-heat items that cook in short times (i.e. chicken pieces, pork chops, burgers, hot dogs, etc) - but to continue to use charcoal for...

    Kalua Pig (Hawaiian Luau)

This recipe is saying 5-6 hours for a 6-8 lb pork butt... Is this assuming 300 degree temps?

    INFO ON STOKER WIRELESS SYSTEM

Yeah, I'm still in the "getting it to work reliably" phase... I've tried a number of things - and I've read messages of people who say it is possible with a Fonera. The tough part is that since it only has one ethernet jack it's hard to troubleshoot it while you are configuring it. I'll...
