    Alternative to a chimney??

It's been about 2 years since I have used anything but my side burner on the gasser. If I am in a hurry I can get a chimney of rancher going in about 20 minutes. If I am in a big hurry I use the turkey fryer. You can get a chimney going pretty fast over a turkey fryer.

    This may sound strange but...

I was thinking along the same lines as Russell, but since using brisket in my chili ground beef hasn't been in my chili since. Once you have chili with brisket you won't go back to ground beef.

    Rib membrane

I'm a take it off guy. I use a butter knife and go in along a bone about the middle of the slab. I work it until I can get my finger in and pull it off. No paper towel for me. As far as costs time, yea I get that. I have a friend who owns a restaraunt and they specialize in ribs. He buys his...

Cost of packer briskets going up?

I noticed this back in the spring. Last year they were $1.25 pretty much all year. This spring I noticed they were $1.58. As far as I know they are still there. I haven't shopped for one for at least a month. Those prices were at wally world. I haven't found packers anywhere else. Well I did...

    Purchasing Brisket

Walmart is the only place I buy brisket. Last year 3 out of the 4 walmart stores that are at almost equal distance from my home carried packers. All 4 had flats. I browsed the full fresh meat one time and noticed every piece of meat they had out had a xx% salt solution injected. Even all of the...

    Exploding Weber Smoker

Here is something different to consider. Were you using lump? If the answer is yes maybe there was a rock in the bag that you didn't see. Said rock gets hot and explodes. There is other threads here talking about this. Anyhow the rock explodes and knocks the water pan off and you can take the...

    Smoked bologna

Alright all this talk about bologna made me hungry for it. I picked one up at sams. Should be ready for lunch tomorrow. I haven't ever put on a rub. I wonder if wild willies would be good on bologna

Cooking multiple briskets (3 or 4)

Bill I wouldn't worry about it overcooking in a cooler. Drying out maybe. I would definately worry about being able to keep them warm. If I understand correctly you are going to cook the first 2 take them off and start the 2 pair and keep the first pair warm during the whole cook. I haven't...

1st time Picnics over Brisket...any tips?

I don't do picnic very often but I take off the skin when I do them. Like all of it go get rub and smoke. Triming the fat is optional. I don't really bother when I do butts. I put the fat cap down when doing butts also. I am more worried about protecting the meat than basting. There is pleanty...

Cooking multiple briskets (3 or 4)

If it was me I would put the first 2 out on the smoker now and reheat later. When I do brisket I put the whole brisket out until the flat is done. I take off the brisket and seperate the point from the flat. I try to leave as much fat on the flat as possible. I foil both and rest the flat then...

    Smokey Joe Grates

Do you have Target stores in your neck of the woods? Grills are on clearance at the moment. I was in there today and saw about a dozen smokey joe's for $15 each. I thought about picking one up but just went with the 22" kettle.

    Smoked bologna

Paul, I used a piece of pipe and cored it like stogie has in his write up. I don't remember using any rub. It has been a while. I definately didn't score it though. I would be hesitant of that. It has a tendency to swell and any weak link may cause it to split. You could try it and let us...

    Smoked bologna

Just buy what you like Bryan. I don't think it matters. Sams sells 5# packages for $5 I picked one of them up last summer. I took the wsm to work and set it a cookin early. 9 or 10 of us tore it up for lunch. I was cutting at least 1/2 inch slabs. There was one piece left when it was said and...

    Spare Ribs $1.97 lb

Jeff S. Watch out for any meat at Kroger. The one near me only has enhanced meat. My brother bought some last year on sale. Brought them over for me to smoke. I already had the rub mixed and went ahead and used it even though I knew I shouldn't. They were a salt lick. They were also not very...

Best Dry Rub in a Can

Meat for Sale out of Truck

I have not had that happen to me. I have seen several instances of the people selling speakers out of a van. After you have it happen a few times you can spot them a mile away. 2 people in usually a white work type van. The kind that doesn't have any windows beyond the doors. Driving through...

    Maple smoke wood?

I really like maple on ribs. I used BRITU and used several chunks of maple along with oak. You talk about good. Tasted like I poured a light coating of syrup on the ribs. I haven't tried it on turkey and don't think I would. Going with Dougs analogy. If I were at breakfast with pancakes and...

the ever popular water pan question

I have been using the piedmont pan for the past several months. I really like that setup. I have been meaning to look at lowes for clay pot to try. I am going to be ordering the dual stoker yet this week. I don't think it will matter much after that.

    Chicken Wings on the WSM?

Those hot cherry wings are outstanding. I have made them a few times. I am lazy and found some frozen chicken wings that are really good smoked. Takes about 1.5-2 hours. They are made by a company called Pilgrims Pride and are called Blazin wings. They have a breading on them and are really...
